Dolma (An Iraqi Kurdish and Turkish Dish)


Dolma is one of the most popular dish from Iraq to Turkey, Russia to Canada. It is basically a Turkish and Kurdish dish



Ingredients

  • 1. Bell pepper (Capsicum)         12 Nos.
  • 2. Rice washed and soaked in water    75 gram
  • 3. Onion finely Chopped             2 nos medium size
  • 4. Parsley  fresh     1/2 bunch chopped
  • 5. Soy fresh         1/2 bunch chopped
  • 6. Fresh mint       1/2 bunch chopped
  • 7. Spring onion  1-2 nos chopped
  • 8. Tomatoes     2 nos finely chopped
  • 9. Olive oil     1 table spoon
  • 10. Butter        1 and 1/2 tablespoon
  • 11. Lemon juice  from 1/2 lemon
  • 12. Fresh garlic   2-3 cloves crushed
  • 13. Minced Meat (mutton/chicken)   Boiled 1/2 kg
  • Spices :  Salt to taste,  black pepper powder 1/2 tsp, Cumin powder 1/2 teaspoon, Sumuk powder  2 teaspoon, Kababa (Cubeb) powder 1/2 teaspoon, Cardamom powder 1/2 teaspoon


Procedure:

  • Remove the top and seeds of bell pepper and keep aside
  • Mix together rice, onion, tomatoes, olive oil, butter lemon juice, garlic and minced meat and spices.
  • Make a paste by kneading like dough  .
  • Fill the mixture to bell pepper  and  cap with tomatoes.
  • Arrange the filled capsicum in a pan, and pour 1 and 1/2 cup hot water to it and cook on low fire till rice, capsicum  becomes tender (60-90 minutes)
  • Delicious Dolmas are ready serve with pitta bread (Arabian bread)
