Gola Ganda is a summer time treat, cool and colourful. Available at push cart vendors near schools and in markets. Enjoyed by Children and Women in Humid and Hot weather for cooooling effects.




Ingredients:

  • Shaved Ice   as required
  • Red Colour syrup as required
  • Green Colour syrup as required
  • Orange colour syrup as required
  • Malai (condensed milk) as required
  • Straw (Hard ) or wooden sticks.


Procedure:

  • Take a mould fill it with shaved ice and press.
  • Insert straw and press.
  • Take out moulded gola ganda from its mould, Apply colourful syrup and malai.
  • Enjoy your Gola Ganda in sips.

Achar Gosht اچار گوشت

Achar Gosht is a very tasty, spicy and pickle flavoured meat recipe from Pakistan. Achar mean Pickle and Gosht mean Meat.
It a very Hot, Sour and Spicy dish cooked in spices normally used for Pickle making..




Masala Filled Green Chillies




























Ingredients:
  • Beef cubes   1 kg
  • Oil (Pure Mustard Oil if available)  1 cup
  • Yoghurt 2 cup
  • Tomatoes chopped 3
  • Onion chopped 3
  • Garlic crushed 2 teaspoon
  • Ginger crushed 2 teaspoon
  • Green Chillies (Achari Mirch) 10
  • Lemon Juice 2 tablespoon
  • Chilli powder  1 teaspoon
  • Chilli cutter 1 teaspoon
  • Salt to taste
  • Haldi 1 teaspoon
  • Klaunji whole  1 teaspoon
  • Methidana whole 1 teaspoon
  • Mustard whole 1 teaspoon
  • Fennel whole 1 teaspoon
  • Black pepper powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon


Procedure:

  • Mix all powder and whole spices together , take 2-3 teaspoon of this masala mix and add lemon juice to make a paste.
  • Slit Green Chilies along one side and fill this masala paste to them. Keep aside.
  • Now in a pan fry onion in oil till golden brown. Add tomatoes, garlic , ginger, yoghurt and remaining masala mixture to it and fry for 5-10 minutes.
  • Add beef cubes and fry for another  5 minutes.
  • Now add 1-2 glass of water and cook on medium flame till beef cubes are tender.
  • Evaporate remaining water on high flame till oil separates out.
  • Now add Masala filled green chillies and simmer for 10-15 minutes.
  • Delicious Achar Gosht is ready.
  • Serve with Naan/Roti/Paratha.

Punjabi Bhunna Gosht is a spicy and tasty dish from Punjab served with roti.



Ingredients:

  • Mutton 1 kg
  • Oil 1 cup
  • Tomatoes chopped 3
  • Onion chopped 3
  • Ginger crushed 2  teaspoon
  • Garlic crushed 2 teaspoon
  • Green Chillies chopped 3
  • Fresh coriander leaves for garnish
  • Salt to taste
  • Chilli cutter 1 teaspoon
  • Chilli powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Haldi powder 1/2 teaspoon
  • Cumin whole 1/2 teaspoon
  • Cloves whole 10
  • Black pepper whole 15
  • Garam Masala 1 teaspoon


Procedure:

  • Fry onion in oil till golden brown.
  • Add tomatoes, ginger, garlic and green chillies and fry for 2 minutes, then add mutton and spices and fry for another 3-5 minutes.
  • Add 1-2 cup of water and cook on medium flame till meat is tender.
  • Evaporate excess water on high heat till  oil separates out.
  • Sprinkle fresh coriander leaves and simmer.
  • Delicious Punjabi Bhunna Gosht is ready.
  • Serve with Naan /Roti and salad.

Arabian Hot Dog العربي هوت دوغ

Arabian Hot Dog is an Arabian version of hot dog. It is a try to give an Arabian touch to regular and world popular hot dog snack. It very delicious and Tangy.





Ingredients:

  • Pitta Bread   4
  • Frank sausage (ready to serve)  4
  • Lettuce Leaves (new and fresh)     8
  • Cheese slices 4
  • Tahina sauce as desired
  • Mayonnaise as desired
  • Ketchup  as desired
  • Pickled Olives slices as desired
  • Tomato slices as desired
  • Pickled or fresh cucumber slices as desired


Procedure:

  • Toss pitta bread on skillet.
  • Apply mayonnaise, then put lettuce leaves, Cheese slices and sausage.
  • Sprinkle Tahini sauce, tomato ketch up.
  • Insert tomato and cucumber slices and finally sprinkle olives slices.
  • Delicious Arabian Hot Dog is ready
  • Roll and serve. Apply extra Ketchup if required.
  • Hummus can also be used with Lebanese salad and tabbouleh.

Gulab Jaman گلاب جامن

Gulab Jaman

Gulab Jaman is a very popular sweetmeat, liked by all ages. Are you ready to eat....Pick one only....you want two...three.....ok take and enjoy.....every child...asking his/her  mother for more.....Child ages from 2 years to  70 years.



Ingredients:
  • Milk powder full cream  2 Cup
  • Maida 2 teaspoon
  • Suji  1/2 teaspoon
  • Saffron threads a few
  • Baking powder 1/4 teaspoon
  • Egg beaten 1
  • Ghee/Butter  2 teaspoon
  • Khoya  4 teaspoon (optional)
  • Oil for deep frying
  • Sugar 2 cup for sugar syrup
  • Water 1 cup for sugar syrup
  • Rose essences a few drops
  • Pistachio chopped for decoration
  • Silver foils (Chandi key warq) for decoration (optional)


Procedure:

  • In a pan add water and sugar and heat till boil. After few boils turn off flame add rose essences and keep aside this sugar syrup.
  • Now add maida, suji, baking powder to the milk powder and mix well. Then add khoya, butter/ghee, egg and saffron threads and mix well to make a thick batter. Make small balls from this batter (malli in urdu). and keep aside.
  • Now heat oil in a flat bottom pan on low flame, introduce prepared balls and continue to cooking on low flame till colour turns to golden dark brown, stirr balls continuously with the help of a stick or spoon so as balls cooked from all sides.
  • Remove cooked balls from oil and introduce in the prepared sugar syrup. The balls will absorb sugar syrup in 2-4 hours and Gulam Jaman will be rady to serve.
  • Remove prepared Gulab Jaman is a serving plate or bowl sprinkle chopped pistachio and apply silver foils and serve.

Tandoori تندوری چکن

Marinated Tandoori Chicken Pieces























Ingredients:

  • Chicken pieces from two chickens  8 nos.
  • Ginger crushed  2 table spoon
  • Garlic crushed  a tablespoon
  • Lemon juice 2 tablespoon
  • Yoghurt   1 cup
  • Red Chilli powder  to taste
  • Salt to taste
  • Cumin powder 1 teaspoon
  • Fennel powder 1 teaspoon
  • Cardamom green 1/2  teaspoon
  • Red Food Colour 1 pinch
  • Oil 1/4 cup


Procedure:

  • Add garlic, ginger, lemon juice , oil, spices to beaten yoghurt and make a paste.
  • Coat the paste on chicken pieces and leave to marinate.
  • Grill over charcoal fire or bake in an oven or Tandoor till meat is tender.
  • Serve with lemon wedges , chutney and Roti/Naan.

  • Hot dog buns 4
  • Frank sausage (ready to use) 4
  • Lettuce leaves fresh  8
  • Pickled cucumber (or fresh cucumber) as desired
  • Tomato slices as desired
  • Mayonnaise as desired
  • Mustard sauce as desired
  • Cheese slices 4
  • Tomato Ketchup as desired


Procedure:
  • Slit buns along length.
  • Apply Mayonnese on both sides.
  • Place 2 Lettuce leaves, Then 1 Frank Sauces, then 1 cheese slice, Insert Cucumber , tomatoes.
  • Apply Mayonnaise, Mustard sauce and Tomato Ketchup and serve.

Dhansak (A Parsi Community Dish)


Dhansak is a popular dish of Parsi community of Karachi. It is a very tasty and nutritious dish cooked with mutton, lentils and vegetables. Pumpkin is the main ingredient which impart sweet taste with sourness of tamarind, i.e. sweet and sour taste of Dhansak.







Ingredients:
  • Mutton cubes 1/2 kg
  • Toor dal (Arhar ki dal)  1/3 cup
  • Split Masoor Dal 1/3 cup
  • Moong Dal 1/3 cup
  • Pumpkin chopped 2 cup
  • Gourd (Loki)  chopped 1 cup
  • Brinjal chopped 1
  • Fresh Qasuri Methi 1/2 cup
  • Potatoes medium chopped 1
  • Green Chillies chopped  4-5
  • Tamarind (soaked in water and seed removed)  25 g
  • Oil 1 cup
  • Onion chopped 1
  • Tomatoes chopped 1
  • Ginger crushed 2 inch piece
  • Garlic crushed 1/2 pod
  • Fresh Coriander leaves for garnish
  • Lemon wedges for Garnish
  • Salt to taste
  • Red Chilli Powder 1 teaspoon
  • Haldi powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Methidana powder 1 teaspoon
  • Sesame seed powder 2 teaspoon
  • Star aniseed powder 1/2 teaspoon
  • Cumin seed 1 teaspoon


Procedure:

  • Take meat, pulses, vegetables, Green chillies, Tomato, Potato, Red Chillies powder, Haldi powder, Salt and 2 glass of water in a pan and cook on medium flame till meat and pulses are tender. Add tamarind and cook for another 5 minutes.
  • Take out tendered meat cubes , and mash the remaining material.
  • Now heat oil in another pan add onion and fry till golden brown,  then add ginger , garlic and fry for 2 minutes then add tendered meat cubes and remaining spices and cook on medium flame for 5 minutes then add mashed vegetables and pulses mixture and cook further for 10-15  minutes.
  • Sprinkle fresh coriander leaves and simmer.
  • Delicious Dhansak is ready serve with brown rice or roti.
  • Squeeze Lemon Juice at top of serving plate or dish before serving.

Ingredients:
  • Chicken  8 pieces (Tikka Cut)
  • Oil 1/4 cup
  • Ginger crushed    2 inch long piece
  • Ginger crushed 1 medium pod
  • Lemon juice 1-2 tablespoon
  • Red Chilli powder to taste
  • Salt to taste
  • Cardamom green powder 1/2 teaspoon
  • Cubeb powder 1 teaspoon
  • Garam Masala powder 1 teaspoon
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Ajwain whole 1/2 teaspoon
  • Black pepper 1/2 teaspoon
Procedure:
  • Mix together all ingredients and make a paste.
  • Then coat this paste on chicken pieces and keep aside to marinate for 2-3 hours.
  • Insert marinated chicken pieces on skewers (seekhs) and grill over charcoal fire till tender.
  • Serve with Mint chutney and salad and Tandoori Roti.

Kulfi
Ingredients:
  • Full cream Milk   2 cup
  • Sugar  2 tablespoon
  • Khoya 2 tablespoon
  • Butter 1 tablespoon
  • Cardamom seeds 1/4 teaspoon
  • Pistachio chopped 1 tablespoon
  • Almond chopped 1 tablespoon
  • Saffron threads   15
Procedure:
  • Mix all ingredients in milk and heat on medium heat with constant stirring to avoid sticking to the pan .
  • When milk (mixture) become thick, pour in moulds and freeze in a freezer for 6-8 hours.
  • Remove from mould and serve.
  • Thandi thar kulfi...... You can  enjoy.

Vindaloo

Vindaloo is a world renowned dish of Goa India, very tasty and delicious.



Ingredients:
  • Boneless lamb   1 kg
  • Oil 1 cup
  • Onion chopped 2-3
  • Ginger crushed 2 inch long piece
  • Garlic crushed 6 cloves
  • Green Chillies chopped 3
  • Fresh coriander leaves for garnish
  • Vinegar 1/2 cup
  • Salt to taste
  • Red Chillies powder 2 teaspoon
  • Coriander powder 1 teaspoon
  • Cumin powder 1/2 teaspoon
  • Haldi powder 1/2 teaspoon
  • Mustard  (Black) powder  1 teaspoon
  • Methidana powder 1 teaspoon
  • Black pepper powder 1 teaspoon
  • Sugar 2 teaspoon
  • Garam Masala 1 teaspoon


Procedure:
  • Add all spices to the vinegar and a make a paste.
  • Apply this mixture to the meat and keep aside for marination for 2 hour.
  • Now fry onion in oil till golden brown.
  • Add ginger , garlic and fry for a while, then add Marinated meat and cook on low heat till meat is tender.
  • Add little water if desired. When meat becomes tender evaporate excess water on high flame till  oil separates out. Sprinkle Fresh Coriander leaves and Green Chillies and simmer for 5 minutes.
  • Delicious Vindaloo is ready.
  • Serve hot with Naan/Boiled Rice/Rot.

Firni ( Punjabi Eid Dessert) فرنی

Firni ( Punjabi Eid Dessert)


Firni is a very famous Eid dessert in Punjab. Very tasty and eye appealing. It is also popular among other communities of India and Pakistan. It is usually served in clay plates.




Ingredients:
Milk (full cream)  1 litre
Rice, fine powder 125 grams
Sugar  150 grams
Pistachio chopped 1/4 cup
Raisins  1/4 cup
Saffron threads  3 pinch

Procedure:
Pour milk in a pan, add all the above ingredients, cook on low heat with continuous stirring, till thick.
Remove in clay plates, Decorate top with pistachios and saffron threads.
Cool and serve.

Phool Gobhi Ka Bhurta is a delicious Vegetarian dish.




Ingredients:

  • Cauliflower   1 kg
  • Peas 1/2 cup
  • Oil 1 cup
  • Onion chopped 1
  • Tomatoes chopped 2
  • Garlic crushed 6 cloves
  • Ginger crushed 2 inch piece
  • Lemon juice 1 tablespoon
  • Green Chillies chopped 3
  • Fresh Coriander leaves for garnish
  • Salt to taste
  • Red chilli powder 1 teaspoon
  • Haldi 1 teaspoon
  • Mustard whole 1 teaspoon
  • Kalaunji whole 1 teaspoon
  • Fennel whole 1 teaspoon
  • Cumin whole 1 teaspoon
  • Garam Masala  1  teaspoon


Procedure:

  • Saute onion in oil for few minutes.
  • Add garlic, ginger ,tomatoes and spices and fry for 5 minutes.
  • Now add Cauliflower and peas and cook on medium flame till tender.
  • Mash with the help of masher or with spoon till smooth and oil separates out.
  • Sprinkle lemon juice and fresh coriander leaves, then simmer for 5 minutes.
  • Serve hot with Butter slices at top. It goes well with Roti.

Chatpatti Mutton Chops چٹپٹی مٹن چانپ

Chatpatti Mutton Chops

Very delicious, nutritious Mutton Chops are very good for young children. It is full of protein and tangy and mouth watering.



Ingredients:

  • Mutton Chops (Lollipops chops style)  1 kg
  • Oil 1 cup
  • Onion chopped 2-3 nos.
  • Garlic crushed  1 medium size
  • Ginger crushed 2 inch long piece
  • Yoghurt beaten  1/2 kg
  • Raw Papaya crushed 1-2 table spoon
  • Red Chilli powder 2 teaspoon
  • Haldi powder 1 teaspoon
  • Black pepper powder 2 teaspoon
  • Cumin powder  2 teaspoon
  • Salt to taste
  • Sumuk powder 2 teaspoon
  • Lemon juice 1 tablespoon
  • Ginger slices for garnish
  • Fresh Coriander leaves  for garnish


Procedure:

  • Mix all spices and papaya in yoghurt and add 1 table spoon oil and mix well .
  • Then coat on Mutton chops and keep aside for 2-3 hour.
  • Heat oil in a pan, add onion and fry till golden brown.
  • Now add marinated chops and cook on simmering heat till meat is fully  tender.
  • Normally no water is needed for this, however if you feel some water is needed you can add.
  • Delicious Mutton Chops are ready to serve. Garnish with Ginger slices and fresh coriander leaves on serving bowl or plate. It goes well with Roti/Naan/Boiled Rice.
  • The Mutton Chops become tender without adding raw papaya, but it takes 30 minutes more to tender on simmering heat.
