Ingredients:

  • Whole Chicken skinless     1
  • Lemon juice 2 -3 teaspoon
  • Ginger crushed 1 teaspoon
  • Garlic crushed 1 teaspoon
  • Red Chilli to taste
  • Salt to taste
  • Yellow Food Colour  1/8 teaspoon
  • Cumin powder 1 teaspoon
  • Ajwain powder 1/2 teaspoon
  • Haldi 1/4 teaspoon
  • Coriander powder 1/2 teaspoon
  • Garam masala 1/2 teaspoon
  • Oil for deep frying 1 liter


Procedure:

  • Thoroughly wash and dry the whole chicken.
  • Make deep cuts on breast and drums.
  • Now mix all spices, ginger, garlic , colour and lemon juice and make a paste.
  • Apply this paste to the chicken and keep aside for marination for 3- 4 hours.
  • Cook marinated chicken in steamer for 45-50 minutes.
  • Then shallow fry in oil to a golden colour.
  • Lahori Charga is ready.Serve with Roti/naan and Salad and Chutney/Raita.

Nargisi Kofta نرگسی کوفتے

Nargisi Kofta



Nargisi Kofta is a very nutritious and beautiful version of Kofta. Egg coated with minced meat and cook on low heat. Very Delicious and tasty dish.





Ingredients:

  • Minced meat  1 kg
  • Boiled eggs without shell 6
  • Yoghurt 1 cup
  • Onion chopped 3
  • Garlic crushed 1 teaspoon
  • Ginger crushed 1 teaspoon
  • Fresh coriander leaves for garnish
  • Red Chilli powder  to taste
  • Salt to taste
  • Bread crumbs 2 tablespoon
  • Haldi 1/2 teaspoon
  • Poppy seeds soaked in water and grinded  2 teaspoon
  • Cumin powder 1 teaspoon
  • Garam masala 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Green Cardamom whole  8


Procedure:

  • Fry onion in oil till golden brown, remove from oil, cool and grind.
  • Mix all spices together and make two portions . whole cardamom should be in portion to be used in curry.
  • Mix 1/2 portion of spices, minced meat, 1/2 quantity of grinded onion, 3 teaspoon yoghurt , bread crumbs and poppy seeds . Knead well then process in an electric processor or sil batta to make a smooth mixture..
  • Now coat this mixture on individual eggs to make meat ball with boiled eggs inside it.
  • Now in a separate pan add remaining grinded onion, remaining yoghurt, 1/2 portion of spices with green cardamom, ginger, garlic to the oil and fry for 3-5 minutes. Then add 2 cup water and cook for 5-10 minutes on medium flame.
  • At this stage introduce meat balls to the gravy and continue to cook on low heat till meat is tender and gravy becomes thick. Garnish with Fresh coriander leaves and simmer.
  • Delicious Nargisi Kofta is ready.
  • Cut in two portions before serving.
  • Serve with RotiNaan.

Bihari Kabab is one of the most popular Kabab of Bihari Community of Karachi. I dedicate my this recipe to my Bihari Classmates Azhar Inam Malik, Syed Anwar Ahmed, Khurshid Ikram Kakavi, Irshad Javed, Baba Abid.











Ingredients:

  • Thin beef slices 2 inch x 4 inch (Parchay or Pasanda meat)  1 kg
  • Mustard oil  3 tablespoon
  • Raw papaya crushed (Unripe papaya)  2 tablespoon
  • Onion crushed 2
  • Ginger crushed 2 teaspoon
  • Garlic crushed 2 teaspoon
  • Yoghurt beaten 1/2 cup
  • Salt to taste
  • Black salt 1/2 teaspoon
  • Chilli powder to taste
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Cubeb (Kabab Chini)  powder 1 teaspoon
  • Mustard powder 2 teaspoon
  • Naushader 1 teaspoon
  • Black pepper powder 1/2 teaspoon
  • Cardamom green powder 1/2 teaspoon


Procedure:

  • Fry onion in oil till golden brown. cool and crush.
  • Now add crushed onion, ginger, garlic, papaya, oil and spices to the beaten yoghurt and make a paste.
  • Coat this paste to meat strips and marinate for 2 hours.
  • Insert the marinated meat strips in skewers (seekhs) in sewing manner.
  • Apply thread to avoid fell during grilling.
  • Now grill over charcoal fire till tender.
  • Bihari Kabab is ready.Serve with raita and salad and Roti/Naan.

Hypokalemic periodic paralysis is a rare disease in which a patient observed episodes of weakness in legs and arms. One in 100,000 peoples suffered this disease. Initially patient do not know what is happening with him, even most of the doctors are not well aware of this disease. Patients go one and another doctor and suffers a lot before this disease is diagnosed.

Symptoms


  • Weakness in legs and arm , which goes on and off.
  • Patient feel thirsty and drinks water again and again
  • Feels severe fatigue
  • Tiredness
  • During an acute attack patient can not swallow
  • During an abortive attack can not walk


Reasons:

  • The serum Potassium drops to below 3.5   (3.5-5.0 is the normal range)

Pasanda Curry is a very tasty and eye appealing curry.



Ingredients:

  • Pasanda Meat slices 2 inch x 4 inch in size 1 kg
  • Onion chopped 3
  • Tomatoes chopped 3
  • Ginger crushed 2 teaspoon

Garlic crushed 2 teaspoon

  • Yoghurt 1/2 kg
  • Oil 1 cup
  • Fresh Coriander leaves  for garnish
  • Red Chilli Cutter 1 teaspoon
  • Red Chilli powder 1 teaspoon
  • Salt to taste
  • Haldi powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon
  • Coriander powder 1/2 teaspoon
  • Garam Masala 1/2 teaspoon
  • Cloves whole 10
  • Cardamom green whole 5
  • Black pepper whole 15


Procedure:

  • Fry onion in oil till golden brown
  • Add meat slices and fry for 2 minutes.
  • Add yoghurt, tomatoes, ginger , garlic, and spices and fry for 5 minutes, then add 2 cup water and cook on medium flame till meat is tender.
  • Evaporate water on high flame then simmer till oil is separates out.
  • Garnish with Fresh coriander leaves and Serve hot with naan/roti and salad/mint raita.

Weight Loss -How and How Much



Most of the peoples wants to lose weight. But First you check  your present weight, most of the peoples are not over weight but they wants to lose weight. If your height to weight ratio is within the range there is no need to loss weight.  The thing to do for these people to maintain their healthy weight.  Do fitness exercise and eat healthy diet.

For those peoples who are under weight, they have to improve their weight by healthy eating habit and food with high energy content e.g 3-4 banana, milk low fat and egg and do some fitness exercise.

For those peoples who are over weight, they can lose their weight. But how ? Quickly or slowly ?

My answer is slowly.   1 lb(pound) or 1/2 kg per week .  But how ?  by dieting or by exercise ?  My answer is both by dieting and exercise.    But how much exercise and how much dieting.  Now I answer this question in detail.

The Ideal weight lose plane is to lose 1 lb/week.  To lose 1 lb from your body in a week you have to curtail(lose) 3500 calories in one week. Divided 3500 by 7 you will get 500. Yes You have to curtail 500 calories/day. Now divide 500 by 2 you will get 250. Yes you have to lose 250 calories by exercise and 250 calories should be curtailed from you diet/day to lose 1 lb from your body weight.

How you burn 250 calories from you workout.  Cycling (stationary) for 10+5 ( 10 minutes cycling 50-70 rpm on zero resistance) and  (5 minutes 40-45 rpm cool down) will burn 100 calories from your body.         And 20+5 minutes walk on tread mill with zero incline at speed 4.5 -5.6 (20 minutes) and at 4.5 (5 minutes cool down) will burn around 100-130 calories.  Some stretching exercises will burn 10 -20 calories.  Please note down these exercises should be learned from a qualified physical trainer or done under his/her supervision.

How you curtail calories from your diet ? Curtail in oil/fat  1 g fat provides provides 9 calories ,it means curtailing 10 g fat from your diet you can curtail 90 calories from your diet.

1 g protein(beef/Mutton/Chicken/fish/egg)  provided 4 calories, it mean curtailing 25 g from protein you will curtail 100 calories from your diet. Try to curtail from  beef and mutton.

1 g Carbohydrates(Sugar/Starch/Grains/Pulses/Bread) provides 4 calories. You can Easily curtail some this portion also.

Please...Please not try to curtail Calories from Fat and Beef and Mutton and some direct sugars. Because Protein is essential during your workout. You can read my other blogs on muxlim regarding this issue.

Ingredients

  • Almonds (Badam) soaked in water for 5-6 hours and peels of                   15-20 nos.
  • Pumpkin/melon seeds (Chahar Magaz)         1-2 teaspoon
  • Poppy seeds    (Khashkhas)    soaked in water        1 teaspoon
  • Black pepper corns (Kali Mirch)                        2-4 nos.
  • Green Cardamom (Choti ilaichi)                        2 nos.
  • Sugar                             to taste                          2-3 table spoon
  • Chilled Milk                                                           200-400 ml


Procedure 

  •  Crush soaked almonds,   poppy seeds, black pepper, Cardamom in a crusher(Manual/electric) to a smooth paste. Then add sugar and milk to it.
  • A delicious almond drink is ready for Iftar.

  • Crush all the ingredients on stone crusher, add salt to taste. Take with meals.

Take one branch or more branches  of Aloe Vera plant. Collect pulpy part by removing hard skin in a pot.

  • The quantity of Aloe Vera pulp should be 250 g, add 1 kg sugar to it.
  • Keep aside for 3-4 hours or overnight.
  • The sugar will extract water from the pulp and a thick syrup will result.
  • Heat this syrup on a low flame, add lemon juice from 2 lemons to it.
  • After 15-20 minutes remove it from heat, cool and then refrigerate.
  • Pour 1-2 teaspoon of this syrup in a glass of water and enjoy.
  • Aloe Vera juice/syrup is beneficial in liver ailments.

I am writing here the formulation of a digestive powder ,the ingredients of this powder is available in your kitchen.  This is also free from Salt (Sodium Chloride) or Tartaric acid (Tatri), therefore it suitable both for high blood pressure patients as well as acidity patients.

  • 1.   Ajwain (ajowain)                              50 gm
  • 2.   Fennel seed (Aniseed, Sounf)        50 gm
  • 3.   Mint Leaves Dry (Podina khushk)   50 gm
  • 4.   Cinnamon (Canelle, Darchinni)       10 gm
  • 5.   Dry ginger (Adrak, sonth)                 50 gm
  • 6. Caraway    (Kala zeera)                     50 gm
  • 7  Black pepper  (Kali Mirch)                   15 gm
  • 8. Black salt (Kala Namak)                      50 gm
  • 9. Indian Naushader (Ammonium Chloride) 20 gm


Grind together all the ingredients and store in an air tight container
Take 1/2 teaspoon after meal.

The following compound of Natural ingredients (nuts) regenerates brain tissues. It is beneficial in tension , fear and anxiety states. It produces natural hypnosis.

1.  Prunus amygdalus   (Sweet almonds, Naghze badam shreen)    15-20gm

One can use it with water, or add to hot milk, or add to hot  horlicks,
It is very tasty.

This preparation also available in market under the name of Somina by Hamdard Dawakhana. 120 gm packing  Cost Rs 150/120  gm pack.
Try it, It is safe only nuts of fruits and vegetables are used.


Dosage

1- 2 teaspoonful in hot milk in morning and at night after breakfast and dinner.

What is peptic ulcer
A peptic ulcer is a sore on the lining of the stomach or duodenum, the beginning of the small intestine.
A peptic ulcer in the stomach is called a gastric ulcer. One that occurs in the duodenum is called a duodenal ulcer.

What causes peptic ulcer
A bacteria called Helicobacter pylori (H. pylori) is a major cause of peptic ulcers.

Symptoms of peptic ulcer
Abdominal discomfort is the most common symptom,  weight loss, poor appetite, nausea, vomiting

Test
A blood test for H pylori

Medications
If blood test report of H. pylori is positive, the doctor will recommend Triple Therapy treatment.
This includes two antibiotics and one acid pump inhibitor


  • 1.  Amoxil 500 mg  (Amoxicillin )     GSK (in Pakistan)       1+0+1


  • 2.  Klaricid 500 mg (Clarithromycin) Abbot (in Pakistan)    1+0+1


  • 3.  Encid 20 mg (Omeprazol)    Willson (in Pakistan)        1+0+1


This treatment is for 14 days . Do not use these medication without your doctors prescription. It is given here only for patients knowledge.

After 14 days 1 and 2 are stopped and number 3 is continued for upto 1 year, after some time your doctor may reduced its dose from 2 cap/day to 1 cap/day or SOS.

During medication period patients feel uneasy e.g. stomach upset, headache, diarrhea, sensitivity to sun.

Take these medication with milk and eat 4-6 banana per day to avoid these symptoms, or discuss of with your doctor.

Another Blood Test
Usually doctor will ask for another blood test for H. pylori after one month of treatment, and further after 2 month and 4-6 month to check the eradication of H. pylori.


Food to avoid
Cold drinks, Pickles, Citrus fruits, Mango (even apples), Peach, Spicy meals, Red Chilli

Normally after eradication of H. pylori patient takes 3-4 years to returned to normal food. Pickles and cold drinks will remain sensitive food.  Medicine number 3 should be used SOS.

For a busy office executive who want to do some work out during his busy schedule.


Here are some suggestions.


Try to  join a gym rather than doing exercise at home, because most of the peoples doing exercise at home can not continue and bored in a few weeks of time. At gym you feel an enviroment of execise and get motivated to see what others are doing.


Work out duration should be in between 45-60 minutes and  3-4 days per week.


You must learn warm up, streching techniques from an expert physical trainer (PT teacher) and do not perform seeing on  other peoples. Because your physical traniner know which techniques are better for you according to your physical health.


Normally   10 minutes for warm up


                  15-20 minutes  walking + 5 minutes cool down  on tread mill


                  10 + 5 mintutes on Stationary cycle


                   10-15 minutes on various streching machines (Leg press, arm strech, chest press etc)

It is very important to eat after a workout.
Most of the people came to gym without any food with them.
Even peoples are not bringing water with them.

Because they are not eating nothing after exercise, they feel tiredness, weakness and fatigue after exercise .  The purpose of their exercise is to get strength but they feel fatigue. Therefore they left the exercise within few days.  The reason of this fatigue is that they get dehydrated and they consumed their energy (fuel) during exercise. Now their body demands energy for normal life.

It is very important to eat protein rich diet after exercise and also carbohydrates and water to refuel thier body within 15 minutes of workout.  If they refuel their body after exercise and drink plenty of fluid (juice and even water) during and after exercise they will not feel fatigue, tiredness and weakness after workout.  They will enjoy an execellent day after exercise.

Bananas are best choice after exercise they are rich in carbohydrate, potassium and other mineral and 2-3 bananas provide exellant calories. 3-4 sweet biscuitsor cookies you can eat if banana is not available.  Chicken nuggests are best choice of protien. Coconut water is an execellent sports drink it is low in carbohydrates and high in potassium and other minerals.

When you are not eating protein and carbohrates after your workout, the body need energy for normal functions, it starts consuming energy stored in your muscles and a person feels weakness in muscles and get tired,

Therfore it is very important to eat diet rich in protein, carbs after your work out, and drink plenty of water during and after your workout. It is also important to void your bladder when you feel, during and before start of an exercise.

However, the cholesterol we get from our food- and this includes eggs- has less effect on the amount of cholesterol in our blood than the amount of saturated fat we eat.

I am a Food Technologist by profession. Most of my friend and family member and other peoples are asking me verbally, by e mail or through friends that we have purchased a product with E number mentioned on label. Is it Haram or Halal.  Even I noticed in some newspapers in past that the products with E numbers mentioned on label are Haram. I wants to explains some points here.

What are Food Additives.

  • Chemicals are  often added to foods as preservatives, to add colour, to help different food substances combine in processed food (e.g. cakes and biscuits). and to enhance the taste and texture of food. These chemicals are known as additives.Most additives included in a product must be listed on the packaging label.



  • Additives which have been approved usually have numbers. Those with E numbers have been approved by European Union .
  • Therefore all the food additives with E numbers are not Haram, however some food additives with E numbers are Haram. Mainly those  food additives derived from animal source which are Haram themself. No mineral sourced  colour or food additives is Haram. Only animal sourced animal derived from Haram Animals are Haram.





As E numbers are approved from European Union, American products are normally approved by FDA, and mentioned as FD&C numbers.  If Muslims countries jointly decided to have food additives safe for Muslim consumers they can use  M or I or H before an approved Muslim or Islamic or Halal Food Additives and Non Food additives (used in drugs/cosmetics/and household items)

Ras Malai is a delicious sweetmeat liked by all ages. Purely milk based sweetmeat.




Ingredients for Malai (Milk doughnut):

  • Milk  full cream   2 litre
  • Baking powder 1/2 teaspoon
  • Lemon juice  1-2 teaspoon or tatri 1-2 pinch
  • Corn starch 1-2 teaspoon
  • Sugar 2 kg

Ingredients for Ras ( Sweetened and flavoured Milk)

  • Milk  1 litre
  • Pistachio  chopped   20
  • Almonds slices and chopped 20
  • Cardamom seeds 1/8 teaspoon
  • Sugar 1/2 - 1 cup
  • Rose essences few drops


Procedure:

  • Boil milk in a pan, after few boils add lemon juice 1 teaspoon at once and stirr, the milk will start coagulating if does not start add more lemon juice.
  • Instead of using lemon juice the tatri (any food acid like Citric acid, Tartaric acid or Malic acid is a better choice if available, it will not impart flavour to milk)
  • When milk fully coagulated add one glass cold water and sieve through muslin cloth (malmal cloth).
  • You will get 200-250 gram of Shaninna (cottage cheese).
  • Now add  baking powder and corn starch to it and dough well to a smooth texture. Then made small balls or patty shaped dumbles from it and keep aside.
  • In a separate pan take  one glass water add sugar  and cook on medium flame to make sugar syrup (chashni or sheera) when boiling started add prepared balls to it and cook till balls doubles in size.
  • Remove from sugar syrup in a pan fill 3/4th  with tap water. After 5 minutes squeeze carefully to remove excess water.
  • Add these to sweetened and flavoured  milk with pistachio, almonds , cardamom seeds and few drops of rose essences.
  • Delicious Ras malai is ready, cool in refrigerator and serve.


Preparation of Sweetened and Flavoured Milk

  • Heat Milk then add Pistachio, almond, sugar, cardamom seeds and rose essence, then cool.

Okra Achar Masala is a purely vegetarian dish with achar taste. Very delicious and tangy .

 


Ingredients:

  • Okra (Lady finger/Bhindi)  1/2 kg
  • Oil 1 and 1/2 cup
  • Onion Chopped 1
  • Ginger crushed 1 teaspoon
  • Garlic crushed 1 teaspoon
  • Tomatoes chopped 2 teaspoon
  • Salt to taste
  • Haldi 1/2 teaspoon
  • Red Chilli cutter 1 teaspoon
  • Red Chilli powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Cumin seed whole 1/2 teaspoon
  • Fennel whole 1/4 teaspoon
  • Kalaunji whole 1/4 teaspoon
  • Ajwain whole1/4 teaspoon
  • Methidana 1/4 teaspoon
  • Mustard whole 1/4 teaspoon
  • Tamarind pulp 2 tablespoon


Procedure:

  • Fry Okra in 1 cup oil and keep aside.
  • Now saute onion in 1/2 cup oil, add ginger, garlic, tomatoes,  spices and Tamarind (Imli) pulp and fry for 5 minutes .
  • Then add fried okra and cook for another 5 minutes, then simmer for 10 minutes.
  • Delicious Okra Achari Masala is ready.
  • Serve with Roti/Rice

Lahori Murgh Cholay is one of the most popular dish of Punjab, Road Side vendors are selling this stuff in all seasons in parks, in bazaars in Industrial areas. Cholay means Kabuli Channa in Punjabi and Murgh Means Chicken.






Ingredients:

  • Chicken  1 kg
  • Kabuli Channa (Garbanzo beans/Chickpea)   250 gram
  • Oil 1 cup
  • Onion chopped 3
  • Tomatoes chopped 3
  • Ginger crushed 2 teaspoon
  • Garlic crushed 2 teaspoon
  • Fresh Coriander leaves for Garnish
  • Mint chutney in yoghurt (Mint Raita) for serving.
  • Salt to taste
  • Red Chilli powder 1 teaspoon
  • Red Chilli cutter 1 teaspoon
  • Haldi 1/2 teaspoon
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Baking soda 3 teaspoon
  • Black pepper whole 15
  • Cloves whole 8
  • Garam Masala  1/2 teaspoon


Procedure:

  • Wash then soak Kabuli channa in water with 2 teaspoon of baking soda for 5-6 hours.
  • Then boil in enough water and  keep aside.
  • Now heat oil in a pan fry onion till golden brown. Add tomatoes, ginger, garlic and all spices and 1 teaspoon baking soda and fry for 2 minutes then add chicken and fry for another 5 minutes.
  • Add 2 cup water and cook on medium flame till chicken is tender.
  • At this stage add boiled Kabuli channa and cook for 10 minutes. Garnish with Fresh Coriander leaves and simmer.
  • Delicious Murgh Cholay are ready serve with Naan and Mint raita.
  • Mint raita is usually poured over Murgh Cholay gravy in serving plate.
