Moutabel (Syria/Jordan/Lebanon) متبل الباذنجان

Moutabel (Syria/Jordan/Lebanon)


Moutabal is a spicy version of Baba Gonoush, It is popular in Lebanon,Syria and Jordan.





Ingredients:

  • Brinjal  3 large size
  • Lemon Juice   2-3 tablespoon
  • Tahini  3-4 tablespoon
  • Olive oil   2 tablespoon
  • Garlic crushed 3 cloves
  • Salt 1/2 teaspoon
  • Black pepper 1/2 teaspoon
  • Green Chillies chopped 1-2
  • Cumin powder 1/2 teaspoon
  • Yoghurt beaten 2-3 tablespoon
  • Fresh Mint leaves chopped For garnish


Procedure:

  • Pierce Brinjal with the help of fork, Then grill over a flame till tender. Check tenderness by inserting fork in skin. It takes around 20-30 minutes.
  • Cut grilled Brinjal in two parts and scoop out flesh/pulp.
  • Add Tahini, Lemon juice, Olive oil, Garlic , salt, pepper, yoghurt, and cumin.  Then process in an electrical processor.
  • Moutabel  is ready. Garnish with Olive oil, Mint leaves and green Chillies . and serve with Pita bread/khubz.

Baba Gonoush (Egyptian Dish)

Baba Gonoush is a very tasty dish of Egypt, popular among Arab around the world. It is made from grilled Brinjal/Aubergine/Eggplant/Baingan.









Ingredients:

  • Brinjal  3 large size
  • Lemon Juice   2-3 tablespoon
  • Tahini  3-4 tablespoon
  • Olive oil   2 tablespoon
  • Garlic crushed 3 cloves
  • Salt 1/2 teaspoon
  • Black pepper 1/2 teaspoon
  • Fresh Parsley/Coriander leaves chopped  for garnish


Procedure:

Fattoush (Syria/Jordan/Lebanon) فتوش سلطة

Fattoush (Syria/Jordan/Lebanon)

Fattoush is a very beautiful and nutritious salad prepared with tossed/saute Pitta Bread. It is popular throughout the Middle East.







Ingredients:

  • Pitta Bread    2 nos.
  • Tomatoes chopped  3 nos.
  • Cucumber chopped 2-3 nos.
  • Lettuce leaves  chopped/torned  4-5 nos.
  • Spring Onion  chopped   3 nos.
  • Fresh Parsley/Coriander leaves  coarsly chopped 1 cup
  • Fresh Mint leaves coarsely chopped  1/4 cup
  • Green Chillies chopped 1-2 nos.
  • Lemon Juice from 2 lemons
  • Olive Oil  1/4 cup
  • Sumak Powder  2 tablespoon
  • Salt 1 teaspoon
  • Black pepper powder 1/4 teaspoon


Procedure:

  • Toss/Saute Pitta Bread in oil till crisp and golden, Cut into diamond like pieces.
  • Take Tomatoes, Spring onion, Cucumber, Green Chillies, Lettuce leaves, Mint and Parsley in a Bowl and mix together.
  • Now add diamond shaped Pitta Bread pieces over it , Then sprinkle Olive oil, Sumak Powder, Black pepper powder and Salt and Mix.  Keep in a Cool place for 1/2 hour Then Serve.

Tabouleh (National Salad of Lebanon/Syria ) تبولة

Tabouleh (National Salad of Lebanon/Syria )



Tabouleh is a National Salad of Lebanon and Syria. Very Eye appealining and Mouth watering , popular around the globe for its colour and taste. It goes well with Kabab, BBQ dishes.





Ingredients:


Burgul  1/2 cup


Tomatoes finely diced    3 nos.


Spring onion  finely diced  3


Lemon juice  2 tablespoon


Fresh Mint leaves finely chopped 1/2 cup


Fresh Parsley/Coriander leaves   finely chopped 2 cup


Olive Oil 3 tablespoon


Salt to taste


Black pepper to taste


Procedure:


Soak burgul in warm water for 1/2 hour, drain and squueze.


Mix all ingredients together. Tabouleh is ready.


Serve with Lettuce leaves.

Hummus (An Arabian Spread) حُمُّص‎

Hummus (An Arabian Spread)

Hummus is one of the most popular Spread/Dip in the Middle East. It is served with Pitta bread or Flat bread and also goes well with Falafal, Grilled Chicken and Fish. It is very tasty, nutritious and yummy.




Ingredients:

  • Boiled Chickpea (Kabli Channa)   1 cup
  • Tahini  2 tablespoon
  • Garlic Crushed 2-3 cloves
  • Lemon juice 1 tablespoon
  • Olive oil 2 tablespoon
  • Black pepper to taste
  • Salt to taste.


 Procedure:

  • Crush boiled chickpea in a food processor or on a Sil Batta (Flat stone grinder) to a smooth texture then add all ingredients and blend.
  • Delicious Hummus is ready.
  • Garnish with Mint leaves or Parsley/Coriander leaves and serve.

Tahini Sauce (Turkey/Syria/Iraq)

Tahini Sauce is one of the most popular sauce after Hummus in Middle East. It is also  known as Mayonnaise of Middle East. It goes well with Sandwiches, Falafel.




Ingredients:
  • Tahini  1 cup
  • Lemon juice 2 teaspoon
  • Garlic crushed  3 cloves
  • Salt to taste
  • Olive Oil   1/4 cup
  • Black pepper powder 1/4 teaspoon
  • Red pepper powder 1/8 teaspoon
  • Fresh Parsley/Coriander leaves 1 tablespoon


Procedure: 

  • Combine all ingredients together and mix well.
  • Delicious Tahini Sauce is ready.
  • Serve as desired.

Tahini الطحينة

Tahini

Tahini is a popular spread/dip of Arab world and main ingredient of Tahini Sauce.

Tahini (Without added oil)

Tahini with oil
Ingredients:
  • Sesame seed  1 cup
  • Olive oil  1/4 cup
Procedure:
  • Wash sesame seed on a strainer under running water, drain and squeeze. now grind on a Sill Batta (Flat stone grinder) or in an Electrical  Food Processor.
  • Add Olive oil and Mix well.
  • Tahini is ready.
You can prepare it without added water. The procedure for this is that Roast slightly sesame seed, cool and then grind. Then add olive oil and blend.

Qeema with Shimla Mirch

Qeema with with Simla Mirch is a very delicious dish, spicy and tasty.



Ingredients:
  • Minced Meat (Beef/Lamb)  1 kg
  • Simla Mirch (Capsicum) , chopped, 3-4
  • Onion chopped 2
  • Garlic crushed 1 medium size
  • Ginger crushed 2 teaspoon
  • Oil 1 cup
  • Fresh Coriander leaves for garnish
  • Salt to taste
  • Red Chilli powder to taste
  • Red Chilli cutter 1 teaspoon
  • Haldi 1/2 teaspoon
  • Coriander powder 2  teaspoon
  • Garam Masala 1 teaspoon
Procedure:
  • Fry onion in oil till golden brown.
  • Add ginger, garlic, minced meat and spices and cook on medium heat till meat is tender. Add water if needed.
  • Now add Simla Mirch and cook on low heat for 10 minutes. Sprinkle Fresh coriander leaves and simmer for 5 minutes.
  • Delicious Qeema with Simla Mirch is ready.
  • Serve with Paratha/Naan

Rogan Josh روغن جوش

Rogan Josh

Rogan Josh is a Kashmiri dish popular world wide.



Ingredients:
  • Mutton     1 kg
  • Yoghurt 1 cup
  • Oil 1 cup
  • Onion chopped 2-3
  • Ginger  crushed, 2 inch long piece
  • Garlic crushed 1 medium pod
  • Butter 1 tablespoon
  • Almond soaked in water ans sliced 20 numbers
  • Fresh Coriander leaves  for garnish
  • Kashmiri Saffron (Zafran) 15 threads
  • Kashmiri Red Chilli powder to taste
  • Salt to taste
  • Rattan jot 1 teaspoon
  • or Red Food colour  a little pinch
  • Cumin powder 1 teaspoon
  • Haldi 1/4 teaspoon
  • Sugar 1 teaspoon
  • Heing a pinch
  • Coriander powder 1 teaspoon
  • Fennel powder 1 teaspoon
  • Cloves whole 8
  • Black pepper whole 15-20
  • Cinnamon pieces 2-3
  • Kashmiri Caraway 1 teaspoon
  • Cardamom brown 3-4


Procedure:

  • Mix all spices in yogurt and make a paste.
  • Apply this paste to meat and keep aside for 1 -2 hours for marination.
  • Now in a pan fry onion in oil  till golden brown.
  • Add ginger and garlic fry for 1 minute, then add marinated meat and fry for 5 minutes.
  • Add  2 glass of water and cook on medium flame till meat is tender.
  • Evaporate excess water on high flame, then lower the flame and cook till oil separates out.
  • Now in a frying pan heat butter add almonds and fry till golden brown, then pour over prepared curry.

Sprinkle saffron and fresh coriander leaves and simmer for 5 minutes.
Delicious Kashmiri Rogan Josh is ready.
Serve with Naan/Rice

Punjabi Ojri Curry پنجابی اوجھڑی کا سالن

 Ojri Curry (Tripe Curry)

Ojri/Ojhri Curry is a low cost dish liked by many people. It is very Delicious and tasty.

Ingredients:

  • Ojri (mutton)   1
  • Onion chopped  2-3
  • Ginger crushed 2 inch piece
  • Garlic crushed 1
  • Tomatoes chopped  3
  • Oil 1 cup
  • Fresh Coriander leaves for garnish
  • Red chilli powder 1 teaspoon
  • Red Chilli cutter 1/2 teaspoon
  • Haldi powder 1 teaspoon
  • Coriander powder 2 teaspoon
  • Garam Masala powder 1 teaspoon


Procedure:


  • Throughly clean and wash Ojri with water and detergent then cut into pieces.
  • Take all ingredients in a pan except fresh coriander leaves and Garam Masala, add 4 glass of water and cook on medium flame for 2-3 hours till Ojri is tender. Evaporate water on high flame then lower the flame and cook till oil is separates out. Sprinkle Fresh Coriander leaves and Garam Masala and simmer for 5 minutes.
  • Delicious Ojri Curry is ready.
  • Serve with Tandoori Roti/Naan.

Bamje (Bosnian Dish)

Bamje (Bosnian Dish)

Bamje/Bamji  is a Bosnian and Albanian speciality. It is Delicious and Tasty. My family likes it very much. Cook at your home and enjoy the dish from Muslim Bosnian influenced by Turkish and Arabian cuisine and European Touch. Salam to Bosnian Muslims.

Ingredients:

  • Baby Okra (small lady fingers)      1/2 kg
  • Lamb cubes  1/4 kg
  • Onion medium size, chopped, 3-4
  • Tomatoes medium size, chopped, 3
  • Garlic, crushed, 1/2 medium size
  • Olive oil  1/2   -  1 cup
  • Black pepper, freshly  grated  1 to 1+1/2  teaspoon
  • Salt 1 teaspoon


Procedure:

  • Chop head and tail of Okra.
  • Fry in oil for 5-10 minutes, remove from oil and keep aside.
  • Now in the same oil add onion and fry on low to medium heat for 5 minutes,  then  add lamb cubes , tomatoes, garlic and pepper and salt and fry for another 5 minutes.
  • Now add 1 cup water and cook on low flame till meat is tender, then add fried okra and simmer.
  • Delicious Bamje/Bamji is ready.
  • Serve with bread and salad/raita.
