Limka Drink / Limca Drink Rawalpindi لمکا ڈرنک راولپنڈی

When I was visiting Rawalpindi some 26 years back I came to know this wonderful drink. People were drinking this drink after dinner walk. They told this is a very digestive  and pleasant drink after a meal.

Ingredients:
  • White carbonated soft  drink (ice chilled)
  • Sugar granulated
  • Black salt  coarse powder
  • Lemon Juice 
  • Crushed Ice
Procedure For Single serving:
  • Place 1-2 teaspoon of freshly  squeezed lemon juice at the bottom of  a glass.
  • Put 1  heaped teaspoon of sugar, 1/4 teaspoon of black salt.
  • Then add crushed ice and then ice chilled white carbonated soft drink.
  • Insert a straw.
  • Serve with a teaspoon.
  • Before sipping slightly stir with a spoon and enjoy. Do not fully dissolve sugar.
  • Enjoy the crunchiness of sugar and black salt during sipping.

Falooda فالودہ

Falooda is one of the most popular drink in summer. It is very sweet, chilled and mouth watering dessert cum drink. In Karachi Dhoraji Gola Ganda Street  near Times  Medicos and opposite to Aga Khan hospital is  famous for its Gola Ganda and Falooda varieties.

Ingredients:
  • Condensed Milk  as desired
  • Crystal jelly as desired
  • Rooh Afza Syrup as desired
  • Coloured sevian cooked in milk with sugar  as desired
  • Vanilla Ice cream as desired
  • Falooda Sev (sevian) if  available as desired
  • Tukm Balanga  soaked in water for 3-4 hours  as desired
  • Gond Katira   soaked in water for 5-8 hours
  • Procedure:
  • In a glass  place condensed milk at bottom of glass,  then add crystal jelly cubes.
  • Then add rooh afza syrup, cooked coloured vermicelli, soaked gond katira, soaked tukm balanga, Falooda Sev and at top scoops of vanilla ice cream. 
  • Sprinkle nuts and serve with straw and spoon.

Afghani Chai افغانی چائے

Chilly  winds are blowing in Karachi for 2 days. For this type of weather Afghani Chai is the best. One can found an Afghan Tea seller with large Tea Kettle and small glass of a particular design in a rack selling hot Afghani Chai in winters of Karachi.  Today I am sharing this recipe of Afghani Chai, hot and pleasant in taste.

Afghani Chai
Ingredients:
  • Water  4 cup
  • Green Tea  2-3 teaspoon
  • Red poppy flowers  3-4
  • Fresh ginger slices 2-3
  • Cloves 4
  • Cardamom green  3
  • Black pepper whole 10
  • Cinnamon sticks 2
  • Star anise  2-3 petals
  • Sugar 3-4 teaspoon
Procedure:
  • Take water in a Kettle.
  • Add all the above ingredients.
  • Bring to boil.
  • After few boils turn off the flame.
  • Strain in small glasses and serve.
   3-4 servings.

Kashmiri Chai کشمیری چائے

Kashmiri Chai  / Kashmiri Tea  is one of the most wonderful tea with its beautiful and eye appealing pink colour. It take time to prepare this wonderful cup of tea. It is usually served on weddings and ceremonies  in Karachi.
Kashmiri Pink Tea
Ingredients:

  • Water 2 cup
  • Green Tea leaves (special variety, Tapal's Gulbahar Green Tea is the best to choose)   2 teaspoon
  • Baking soda 1/4 teaspoon
  • Ice cold water 1 and 1/2 cup  
  • Milk powder full cream (Nido)  3 teaspoon
  • Sugar 2-3 teaspoon
  • Cardamom small  broken 3
  • Cloves 3
  • Finely diced almond  10
  • Finely diced pistachio  15

Procedure:

  • Take 2 cup of water in a stainless steel pan.
  • Bring to boil.
  • Then add green tea leaves and continue to cook till water remain half on medium flame.
  • Then add baking soda and bring to boil with continuous stirring (beating/airing) for 3-5 minutes.
  • When colour changes to brownish pink,  turn off the flame.
  • Add ice chilled water in portion and with continuous airing/beating.
  • When colour turns to pink add milk powder, sugar, cardamom, and cloves.
  • Simmer for  5 minutes. 
  • Then filter in another pan, add almond and pistachio and simmer again for few minutes.
  • Delicious and Warmer Kashmiri Chai is ready.
  • Serve hot.

Date Milkshake is a very very delicious and nutritious drink. Is gives extra energy at Iftar during Ramadan,  the month of dates. Thousand of kilogram of dates are consumed during the Holy Month of Ramadan at Sehar and at Iftar.

  • Date pitted  , good quality  6-8
  • Full cream chilled milk   1 glass
  • Sugar 2-3 teaspoon

Procedure:

  • Take all ingredients in an electric blender.
  • Blend for 3-5 minutes.
  • Remove in a glass.
  • Serve chilled.
  • Delicious Date Milkshake tastes good.

Mango Smoothie / Mango Lassi مینگو لسّی / سموتھی

Smoothie in USA and Mango Lassi in Pakistan have the same recipes. It is just  by chance both nations are opposite to each other.  Thick creamy texture of yoghurt and Mango pulp gives it a distinct taste and flavour.  Mangoes are readily available now,  arrange and prepare a glass of Smoothie / Mango Lassi and enjoy.

Ingredients:

  • Mango slices    1 cup
  • Yoghurt  250 g
  • Ice cubes  as desired
  • Sugar or honey 2-4 teaspoon

Procedure:

  • Take all ingredients in an electric blender.
  • Blend for 2-4 minutes.
  • Fill in a glass, insert a straw and sip the chilled smoothie / Mango Lassi.

Keri Ka Sharbat / Aam Panna / Raw Mango Syrup کیری کا شربت

Keri Ka Sharbat  is a refreshing and coolant against heat stroke.  Its a sweet and sour syrup made from raw mangoes in Summer.

Keri Ka Sharbat

Ingredients:

  • Raw mangoes, washed   1/2 kg
  • Sugar   3-4 cup
  • Black salt 1/4 teaspoon
  • Black pepper powder 1/8 teaspoon
  • Lemon juice 1/2 teaspoon


Procedure:

  • Thoroughly wash  the raw mangoes.
  • Then boil in enough water.
  • Remove skin and discard stone.
  • Retain pulp.
  • Pass the pulp through muslin cloth/Malmal cloth.
  • Now take the pulp in a stainless steel pan.
  • Add sugar , black salt , black pepper and lemon juice to it.
  • Also add 1/2 glass water and cook on medium heat.
  • After 2-3 boils stop cooking.
  • Cool and fill in bottle to be used later.
  • For serving add 2-3 tablespoon of prepared syrup in a glass and add chilled water.
  • Enjoy the tasty Keri Ka Sharabat on a hot and humid Summer day.

100% Pure Rose Syrup / Gulab Ka Sharbat خالص گلاب کا شربت

If you wants to drink 100 % Pure Rose Syrup ,  follow the below recipe, it is free from colour, flavour and preservatives.

Khalis Gulab Ka Sharbat

Ingredients:

  • Sugar  1 kg
  • Roses, freshly plucked  200-300 g
  • Tatri  1/4 teaspoon


Procedure:

  • Separate petals from stems.
  • Rub sugar with petals.
  • Add 1 glass water and cook on medium flame.
  • When starts boiling add tatri and cook for 3-5 more boils.
  • When syrup is clear stop cooking.
  • Strain/sieve hot carefully in a large strainer.
  • Cool and fill in glass jar.
  • Keep refrigerated while not in use.
  • Take 3-4 spoon of this syrup and and chilled water and ice cube.
  • Enjoy the 100% pure Rose Syrup drink.

Gond Katira Sharbat گوند کتیرا شربت

Gond Katira Sharbat is a refreshing and cooling drink of summer. Katira gond is a vegetable gum transparent in colour. It absorbs 200 to 400 times water to its volume. When soaked in water for 6-8 hour it becomes transparent. It has many health benefits the most important is it impart coolant effect to the body. Try this syrup on Iftar this Ramadan.

Ingredients:

  • Gond Katira 1 tablespoon, soaked in water for 6-8 hours
  • Tukh Malanga (Tuk e Malanga)  1 tablespoon  soaked in water for 6-8 hours
  • Chilled Milk  2 glass
  • Rooh Afza  8 teaspoon
  • Condensed Milk 2 glass

Procedure:

  • Sieve soaked katira gond and tukh malanga, place half quantity of each in 2 different glasses.
  • Add Chilled  Milk to each glass.
  • Add Rooh Afza and Mix well with the help of spoon.
  • Pour condensed milk on top and serve.

Ice Cream Syrup is a green coloured syrup of Ice Cream flavour. A Pakistani Company Quice Food Industry Brand Ice Cream Syrup is the only brand which got popularity. Other companies also introduced their brands but can not survive in market against Quice Ice Cream Syrup.
You Can make this syrup at your home very easily.




Ingredients:
  • Sugar 1kg
  • Tatri 1 pinch
  • Rose water 1 cup
  • Ice cream flavour  few drops
  • Green Food colour 1 small pinch
Procedure:
  • In a pan add sugar, citric acid  and rose water.
  • Cook on medium flame till boil, after few boils a clear syrup with obtained.
  • Cool then add colour and flavour. Mix well.
  • Ice Cream Syrup is ready.
  • Take 3 teaspoon of this prepared syrup in a glass add ice chilled water and enjoy.

Falsa Sharbat) فالسے کا شربت

Falsa is a very useful fruit in the May-Jun seasons. It is refreshing and cooling.

Falsa Syrup is very easy to prepared and can be used when flasa is not available in market.



Ingredients:
  • Sugar 1 kg
  • Falsa  250 g
  • water  1cup
  • Falsa flavour (optional) few drop
  • Purple  Food Colour (optional)  one little pinch
Procedure:
  • Pick and wash flasa under running water tap.
  • Put in a electric blender with 1 cup water and blend for few minutes.
  • Pass through muslin cloth or metal strainer to get liquid by pressing and squeezing.
  • Now Take  sugar and falsa extract in a pan , cook on medium flame till a clear syrup is obtained.
  • Cool , add colour and flavour if required, Then fill in bottle.
  • Keep refrigerate till required for use.
  • Use 2-3 teaspoon of prepared Falsa Syrup in a chilled water and drink.

Afza Syrup (Lal Sharbat of The East) شربت روح افزا

Afza Syrup is reffered to the Red coloured syrup of the Sub Continent (Pakistan, Bangladesh and India). Hamdard Dawakhana of Pakistan and India are the pioneers of this product. It is one of the most popular summer time drink of this region of the world. There brand name is Rooh Afza. However Naurus and Jam e Shireen are also getting place in Market.



The Main ingredient of this syrup is sugar. Sugar is converted into glucose and fructose by adding little citric acid during cooking with water. Arqiyat (water distilates) of Kewra, Rose, Sandal wood, some water distilates of vegetables like carrot and coriander, some fruit distilates of like apple are also used. Those fruits and vegetables are selected which imparts cooling and refreshing impact in summer. Some  herbs having cooloing and thirst quinching properties are also used like Khus. Artificial flavours and colours are also used. 

In industries like Hamdard, automatic cooking and cooling plants are involved in manufacturing of this surup. You can also made this syrup at your home  by my this simple recipe.

Ingredients:

  • Sugar  1 kg
  • Tatri (citric acid) 1 pinch
  • Rooh Kewra  1/2 cup
  • Rose water 1/2 cup
  • Sandal wood oil few drops
  • Red Food Colour 1 pinch
Procedure:

  • In a pan take sugar add Rooh kewra and Rose water , cook on medium flame till boil after 1-2 boils add tatri and continue to cook till clear sugar syrup is obtained.
  • Remove from flame cool
  •  Add Sandal wood oil, Rooh kewra, Rose water and adjust colour.
  • Afza syrup is ready. Enjoy adding 2-3 teaspoon of prepared syrupp to chilled glass of water.
  • Instead of tatri lemon juice ( 1 teaspoon) can be used.
  • Artificial flavours can also be used if  Rose , Kewra and Sandal water/oil are not available.

Fresh Jal Jeera

Jal Jeera is a refreshing, digestive and carminative drink of Northern India. Jal Jeera powder is available in market of various brands. Tou can make it at your home with fresh ingredients. Recipe for 1 glass of chilled Jal Jeera is given below.



Ingredients:

  • Fresh Mint leaves 10
  • Fresh Coriander leaves 10
  • Roasted Cumin seeds 1 teaspoon
  • Ginger slices 5
  • Lemon Juice from 1/2 lemon
  • Black salt 1/4 teaspoon
  • Cooking salt 1/4 teaspoon
  • Sugar 2 teaspoon


Procedure:

  • Take 1 glass ice chilled water in a blender, add mint, coriander leaves, ginger, black salt, cooking salt, roasted cumin seeds, lemon juice and sugar. Blend on high speed, then pour in water. Add ice cubes , garnish with mint leaves and lemon wedge and Serve.

Pina Colada is a wonderful drink form Haspania (Spain) in modern age and popular worldwide. Muslim ruled this country for many centuries so made this Drink during this Ramadan and thing your Muslim past in Spain. In real Pina Colada Rum is used which is Haram, I substituted this with Omore Vanila Ice cream.






Ingredients:

  • Chilled Pine apple Chunks  1 Cup
  • Coconut Milk Chilled  1/3 cup
  • Vanilla Ice Cream  2 scopes
  • Ice Cubes as needed

Procedure:

  • Put pine apple chunks, Coconut milk and Ice cubes in an electric blender and blend for 2-3 minutes.
  • Pour in Glass add two scoops of vanilla Ice cream and Serve.

Mango Shake is an all time popular Shake of summer. Its recipe is very simple.







Ingredients:

  • Mango Chunks, Chilled   1 cup
  • Milk Chilled  1 cup
  • Sugar  2 teaspoon
  • or
  • Honey  2 teaspoon
  • Rose Water   1  teaspoon
  • or
  • Rose Essences  1 drops

Procedure:

  • Put Mango chunks, Milk, sugar/honey  and Rose water/Rose essences in an electric blender and blend for 2 minutes.
  • Delicious Mango Shake is ready.
  • Remove in a glass and serve.
  • Note: Ice Cubes can be added during blending for extra chilling effects.

Thandiai /Thadal (Almond Drink for Ramadan)



Thandiai in Punjabi and Thadal in Sindhi is a unique and refreshing drink for summer. It is also consumed in Ramadan at Iftra for refreshness.




Ingredients

  • Almonds (Badam) soaked in water for 5-6 hours and peels of                   15-20 nos.
  • Pumpkin/melon seeds (Chahar Magaz)         1-2 teaspoon
  • Poppy seeds    (Khashkhas)    soaked in water        1 teaspoon
  • Black pepper corns (Kali Mirch)                        2-4 nos.
  • Green Cardamom (Choti ilaichi)                        2 nos.
  • Sugar                             to taste                          2-3 table spoon
  • Chilled Milk                                                           200-400 ml


Procedure 

  •  Crush soaked almonds,   poppy seeds, black pepper, Cardamom in a crusher(Manual/electric) to a smooth paste. Then add sugar and milk to it.
  • A delicious almond drink is ready for Iftar.

Aloe Vera Juice


How to Make Aloe Vera Juice
Take one branch or more branches  of Aloe Vera plant. Collect pulpy part by removing hard skin in a pot.

  • The quantity of Aloe Vera pulp should be 250 g, add 1 kg sugar to it.
  • Keep aside for 3-4 hours or overnight.
  • The sugar will extract water from the pulp and a thick syrup will result.
  • Heat this syrup on a low flame, add lemon juice from 2 lemons to it.
  • After 15-20 minutes remove it from heat, cool and then refrigerate.
  • Pour 1-2 teaspoon of this syrup in a glass of water and enjoy.
  • Aloe Vera juice/syrup is beneficial in liver ailments.

Gola Ganda is a summer time treat, cool and colourful. Available at push cart vendors near schools and in markets. Enjoyed by Children and Women in Humid and Hot weather for cooooling effects.




Ingredients:

  • Shaved Ice   as required
  • Red Colour syrup as required
  • Green Colour syrup as required
  • Orange colour syrup as required
  • Malai (condensed milk) as required
  • Straw (Hard ) or wooden sticks.


Procedure:

  • Take a mould fill it with shaved ice and press.
  • Insert straw and press.
  • Take out moulded gola ganda from its mould, Apply colourful syrup and malai.
  • Enjoy your Gola Ganda in sips.

Doodh Soda دودھ سوڈا

Doodh Soda (Milk Shake with Mountain dew or Coke/Pepsi) For Ramadan

Doodh Soda is a Punjabi style milk soda shake. It is very tasty and delicious. In Punjab soda bottles are available, this soda bottle is mixed with milk. A Very pleasant drink is prepared.

Milk (chilled)                  500 ml
Coke/Pepsi/Dew/7 Up or whatever  flavour you like(Chilled)   500 ml

Mix together Milk and Cold drink just before Iftaar, You will never forget the taste of this Milk Shake.
Try it Today.  Happy Ramadan.

For Diabetics patients, Sugar Free Cold Drink can be used.

Tulsi Tea تلسی کی چائے

Tulsi Tea


Ingredients
Tulsi leaves                           5-6 fresh leaves (dry leaves can also be used)
Green tea                               1 teaspoon
Sugar                                      to taste
Water                                      200 ml (1-1 1/2 cup



Procedure     
Take water in a kettle add tulsi leaves, green tea and sugar to it
Boil on medium flame for 10-15 minutes
Strain/sieve  in a cup and serve hot.
Consume in sips , You will feel fresh. This tea is very usefull in cold and flu.
Enjoy this tea after Iftar during Ramadan
