Sabzi Bharay Koftay سبزی بھرے کوفتے

Sabzi Bharay Koftay are very delicious and nutritious variety  among Kofta.

Sabzi Bharay Koftay

Ingredients:
For Sabzi:

  • Boiled  potatoes 3-4
  • Chopped and boiled carrots 2-3
  • Boiled peas  1 cup
  • Chopped onion  1
  • Chopped  green chillies  3
  • Salt to taste
  • Black pepper 1/2 teaspoon
  • Red Chillies flakes 1 - 2 teaspoon


Procedure:

  • Mash together all vegetable add spices and make walnut size balls.
  • Coat around these ball prepared meat mixture and cook according to following procedure.

Afghan Shola افغان شولا

Afghan Shola is a delicious and easily digestible dish. It is used with or without kofta.

Afghan Shola
Ingredients For Shola:
  • Broken Rice (Tota Chawal)   1/2 kg
  • Moong Sabut (moong beans)  200 g
  • Onion chopped 1
  • Garlic cloves chopped 5-6
  • Oil 1/2 cup
  • Salt 2 teaspoon
  • Haldi powder 1/2 teaspoon
  • Black pepper whole 1 teaspoon
  • Cloves 5-6
  • Cinnamon sticks 2

Ingredients for Kofta:

  • Beef cubes boneless 1/2 kg
  • Oil 1 cup
  • Yoghurt beaten  1/2 cup
  • Tomatoes chopped 2
  • Onion chopped 2 medium-size
  • Ginger crushed 1 teaspoon
  • Garlic crushed 1 teaspoon
  • Fresh mint leaves 1 tablespoon
  • Fresh coriander leaves  1tablespoon
  • Green chillies chopped 3
  • Fresh red chillies chopped 3
  • Salt to taste
  • Red chillies powder 1 teaspoon
  • Turmeric powder 1/4 teaspoon
  • Garam masala 1/2 teaspoon
  • Poppy seed soaked and crushed 2 teaspoon
  • Cumin seed powder 1 teaspoon
  • Coriander powder 1 teaspoon

Procedure for Shola:

  • Soak rice in water for 20 minutes.
  • Wash and drain keep aside.
  • Soak moong beans in water for 15 minutes.
  • Wash , drain and keep aside.
  • Fry onion in oil till golden.
  • Add  cinnamon , cloves and black pepper, then add garlic,  haldi,  salt  and  add 1/2 cup water. Fry for 3-4 minutes.
  • Now add soaked sabut moong and cook till half tender.
  • Add 2-3 glass water and soaked rice and cook on medium flame till rice and dal are tender.
  • Check the stickiness of cooked rice, if not add a little water.
  • Simmer for 10 minutes.
  • Shola is ready for serving.

Procedure for Kofta:

  • Fry onion in oil till golden brown.
  • Remove from oil , cool and grind. keep aside.
  • Mix powder spices together, make two portions of it.
  • Now add 1/2 quantity of ground onion, 1/2 quantity of spices, 1/2 quantity of ginger garlic to the beef cubes.
  • Rub and mix well. Process in an electric food processor to a smooth texture.
  • Make baby koftas from this mixture and keep aside.
  • Now heat oil in a pan, adds remaining onion , spices, ginger garlic paste and  tomatoes. Fry for 3-5 minutes and then add yoghurt. Fry for 5-6 more minutes.
  • Add half to one cup water, cook for a boil. Then add prepared kofta balls to it.
  • Cook on low heat till koftas are well done/tender. Stir carefully during kofta cooking to avoid breakage. 
  • Sprinkle fresh mint leaves, coriander leaves , fresh red and green chillies on top and simmer for 5-10 minutes.
  • Delicious Kofta gravy is ready for Shola.
  • Gravy of kofta gravy should be thick.

Serving of Shola:
Shola is served with saltish thick yoghurt with or without Kofta curry/gravy.

Muthi Kabab مٹھّی کباب

Muthi Kabab when prepared with beef is a very delicious Kabab.

مٹھّی  کباب
Muthi Kabab
Ingredients:
  • Boneless beef cubes 1 kg
  • Oil for frying 
  • Salt to taste
  • Red chilli powder 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Garam masala  powder  1 teaspoon
Ingredients added during mixing:
  • Finely chopped spring onion 2
  • Finely chopped  green chillies 2
  • Finely chopped tomato cubes  from 1 tomato
  • Black pepper grated 1/2 teaspoon
  • Red Chilli flakes (cutter) 1-2 teaspoon
  • Cumin seed whole 1 teaspoon
  • Coriander seed whole  1 teaspoon
  • Anardana 1 tablespoon
Procedure:
  • Mix together beef cubes, salt coriander powder, chilli powder, garam masala powder and ginger garlic paste in a bowl.
  • Then process in an electric processor (chopper). 
  • Knead well. Then add finely chopped spring onion, green chillies, tomato cubes, anardana, chilli flakes, cumin whole , coriander whole and  grated black pepper. Mix and knead well.
  • Then make 2 inch size oval shaped Kabab with the help of fist (muthi).
  • Heat 1/2 cup oil in a nonstick frying pan. Add prepared kabab (4-5) in portions and fry on a very low flame till fully cooked.
  • Delicious Muthi Kababs are ready.
  • Serve with chopped spring onion , chopped tomato cubes and Mint raita.

Koyla Keema کوئلہ قیمہ

Koyla Keema is a very delicious BBQ style dish served with Paratha. You can make paratha roll with Koyla Keema.

Koyla Keema
Ingredients:

  • Minced Beef   1 kg
  • Oil 1/2 cup
  • Yoghurt 1/2 cup
  • Onion chopped 2
  • Ginger paste 1 teaspoon 
  • Garlic paste 1 teaspoon
  • Raw papaya paste 1 tablespoon
  • Green Chillies chopped 3-4


  • Fresh Mint leaves 1/2 cup for simmering
  • Fresh Coriander leaves  1/2 cup for simmering
  • Green Chillies whole 4-6 for simmering
  • Julian cut ginger 1 tablespoon for simmering
  • Burning Charcoal 2-3 for simmering
  • Butter 1 teaspoon for simmering


  • Salt to taste
  • Red Chilli powder 1 teaspoon
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Black pepper powder 1/2 teaspoon
  • Garam Masala powder 1/2 teaspoon

Salad:

  • Tomatoes disc grilled with butter
  • Shredded onion as desired

Procedure:

  • Apply raw papaya paste to minced beef and keep aside for 1/2 hour.
  • Now fry onion in oil till brown.
  • Add ginger garlic paste and papaya coated minced beef, yoghurt, green chillies chopped  and spices.
  • Fry for few minutes then cook on medium flame till minced beef is fully done.
  • Spread fresh mint and coriander leaves, green chillies whole and Julian cut  ginger on top of the prepared minced beef. 
  • Place burning coals on piece of Alumium foil or onion cup or piece of bread on top layer.
  • Apply 1 teaspoon of butter on top of buring coal and quickly close the lid. Place weight on lid to avoid leakage of smoke. Simmer for 10 minutes.
  • Delicious Koyla Keema is ready.
  • Serve with Salad as mentioned above , mint chutney and Paratha.

Beef Korma / Beef Qorma بیف قورمہ / گائے کے گوشت کا قورمہ

Beef Korma is one of the most popular and tastier Korma. It takes much time to cook but end in a very tasty dish. Good Quality beef is available in every home these days due to Eid ul Azha. You can cook this now and enjoy. Beef  Korma is also a choice of many at weddings.

Beef Korma
Ingredients:

  • Beef  1 kg
  • Oil 1 cup 
  • Yoghurt, one day old sour , 250 g
  • Onion chopped 3-4
  • Ginger paste 1 teaspoon 
  • Garlic paste 1 teaspoon
  • Salt to taste
  • Red Chillies powder 1 teaspoon
  • Haldi 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Cumin powder 1/2 teaspoon
  • Garam Masala 1/2 teaspoon
  • Cardamom small  8-10
  • Cardamom black 3
  • Balck pepper whole 1/2 teaspoon
  • Cloves whole 10
  • Kewra water 1/2 cup


Procedure:

  • Fry onion in oil till golden.
  • Now add ginger garlic pastes and spices and fry for few minutes.
  • Then add beef and fry for 5 more minutes.
  • Add 2-3 glass water and cook on medium flame till beef is fully tender.(60-120 minutes). Add more water if needed.
  • At this stage add beaten yoghurt and kewra water  continue to cook till oil separates out. Stir occasionally during cook.
  • Delicious Beef  Korma is ready.
  • Serve hot with Taftaan.

Keema Karelay /Bitter Gourd With Minced Meat قیمہ کریلے

It is one of the most liked dish  by me. It is a very tasty dish of meat and vegetable.

Ingredients:

  • Minced Meat  1/2 kg
  • Bitter Gourd   shaved and chopped 3-4
  • Oil 1 cup
  • Onion chopped 2-3
  • Tomatoes chopped 2
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Salt to taste
  • Red chilli powder 3/4 teaspoon
  • Haldi powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Garam Masala powder 1/2 teaspoon

Procedure:

  • Apply 1 teaspoon of salt to chopped bitter gourd and keep aside for 1/2 hour.
  • Then wash in running water and squeeze and keep aside.
  • Now saute onion in oil.
  • Add ginger garlic paste fry for 1 minute.
  • Then add tomatoes, minced meat and spices.
  • Fry for 5 minutes.
  • Add 1 cup water, and continue to cook on low heat till minced meat is tender.
  • When minced meat is tendered add  washed and squeezed bitter gourd.
  • Cook on medium flame till bitter gourd is done.
  • Delicious Keema Karelay are ready.
  • Serve hot with chapati/ roti.

Dal Keema / Minced Meat and Dal Chana دال قیمہ

Dal Keema is a tasty minced meat and chana dal dish. This dish also liked by President Obama.

Dal Keema
Ingredients:

  • Minced Meat (Beef/Mutton)   1/2 kg
  • Dal Chana  100 g
  • Oil 1 cup
  • Onion chopped  2-3
  • Tomatoes   chopped 2-3
  • Ginger paste  1 teaspoon
  • Garlic paste  1 teaspoon
  • Green Chillies chopped  2-3
  • Fresh Coriander leaves for garnish
  • Salt to taste
  • Red Chillies 1 teaspoon
  • Haldi 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Garam Masala  1/2 teaspoon

Procedure:

  • Boil dal in enough water, drain and keep aside.
  • Fry onion in oil till golden.
  • Add ginger garlic paste fry for 1 minute.
  • Then add tomatoes and minced meat, salt, chilli , haldi and coriander powder .
  • Fry on high flame for 3-5 minutes.
  • Then add 1 glass water and cook on low flame till meat is tender.
  • Add more water if necessary. 
  • When meat is tender add boiled dal and cook for 5 more minutes on low flame.
  • At last sprinkle garam masala, add green chillies and fresh coriander leaves.
  • Simmer for 5-7 minutes.
  • Delicious Dal Keema is ready.
  • Serve with shredded onion, pickle and roti.

Beef Nihari گائے کے گوشت کی نہاری

Nihari is one of the most popular beef dish in Karachi.  Most famous Nihari shop is Javed Nihari near Karimabad.   Nihari is a very tasty dish served with Tanddori Naan. Nihari dish is a must dish in almost all the small and medium hotels of Karachi. You can cook at your home very easily. Ask you Meat seller for Nihari meat known as Bong ka Gosht in Urdu or Shin Meat in English.

Ingredients:

  • Bong Ka Gosht/Nihari Meat/Shin Meat   1 kg - 1.5 kg
  • Oil 1 cup
  • Yoghurt 1/2 cup
  • Wheat flour 3-4 tablespoon
  • Onion chopped 1 medium size
  • Salt to taste
  • Red Chilli powder 1 teaspoon
  • Haldi powder 1/2 teaspoon
  • Coriander powder 1/2 teaspoon
  • Badiani phool 2-3 grinded
  • Fennel powder 1 teaspoon
  • Garam Masala 1/2 teaspoon

Garnish:

  • Lemon wedges as desired
  • Fried onion as desired
  • Chopped green chillies as desired
  • Mint leaves chopped 1 cup
  • Coriander leaves chopped 1 cup
  • Julian cut ginger 3-4 tablespoon

Procedure:

  • Heat oil in apan.
  • Add meat, spices and yoghurt and fry for 5-7 minutes.
  • Add 3-4 glass of water and cook on medium flame till meat is tender.
  • Now dissolve wheat flour in a cup of water, and add to the cooking curry in portions and with vigorous stirring.
  • Simmer for 10-15 minutes till oil is separates out.
  • Fry onion in 1 tablespoon of oil till golden then pour over the prepared curry.
  • Delicious Beef Nihari is ready.
  • Serve with garnish and Tandoori Naan.

Matar Keema /Matar Qeema مٹر قیمہ

Matar Keema is a very delicious combination of vegetable and meat.

Matar Keema /Peas with  Minced Meat
Ingredients:

  • Minced Meat (Keema)   1/2 kg
  • Matar (Peas)   1 cup
  • Oil 1 cup
  • Onion chopped 2
  • Tomatoes chopped 2
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Green Chillies chopped 2-3
  • Salt to taste
  • Red Chillies powder 1 teaspoon
  • Haldi powder 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Cumin powder 1/2 teaspoon
  • Black pepper whole 1/2 teaspoon
  • Cloves whole 4
  • Garam Masala 1/2 teaspoon

Procedure:

  • Fry onion in  oil till brown.
  • Add ginger garlic paste fry for 1 minutes, then add tomatoes and fry for another 5-6 minutes.
  • Now add  minced meat  and spices except garam masala  fry for 4-6 minutes on medium flame.
  • Now add 1 glass water and continue to cook till meat is fully tender.
  • Now add peas (matar) and cook again on low heat till peas are cooked.
  • Sprinkle green chillies and garam masala and simmer for 5-8 minutes.
  • Delicious Matar Keema is ready.
  • Serve with Tandoori roti.

Chukandar Gosht / Beet Root with Leaves and Beef چقندر گوشت

Chukandar / Beet with leaves
Ingredients:

  • Beef   1 kg
  • Chukander (Beet) with leaves, beet diced ,leaves chopped    1/2 kg
  • Spinach  chopped 1/2 - 3/4 kg
  • Onion chopped  2
  • Tomatoes chopped 3-4
  • Oil 1 cup
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Green Chillies whole 2
  • Fresh Coriander leaves for garnish
  • Salt to taste
  • Red Chillies powder 1 teaspoon
  • Red Chillies cutter/flakes  1 teaspoon
  • Haldi powder 1/2 teaspoon
  • Coriander powder 2 teaspoon
  • Cumin powder 1/2 teaspoon
  • Garam Masala powder 1 teaspoon

Procedure:

  • Boil spinach in water, drain and keep aside.
  • Now fry onion in oil till golden.
  • Add ginger garlic paste, fry for 1 minute then add tomatoes, meat and spices except garam masala.
  • Fry for 5 minutes.
  • Then add 1 glass water and cook on medium flame till meat is tender.
  • Now add boiled spinach, diced beet, chopped beet leaves and cook to tender.
  • Now add garam masala, green chillies and fresh coriander leaves.
  • Simmer for 5 minutes.
  • Delicious Chukander Gosht is ready.
  • Serve with Roti or boiled rice.

Bihari Boti بہاری بوٹی

Bihari Boti is a modified form of Bihari Kabab. It is easy to handle and arrange. Instead of beef steaks (Beef Parcha)  beef cubes are used. The spices are almost same as Bihari Kabab.

Ingredients:
  • Beef cubes  medium size  2 kg
  • Mustard oil 1 tablespoon
  • Yoghurt 1/4 cup
  • Raw Papaya paste 3-4 tablespoon
  • Lemon Juice 2 teaspoon
  • Onion  chopped 1
  • Ginger paste  1 teaspoon
  • Garlic paste  1 teaspoon
  • Salt to taste
  • Black salt 1/4 teaspoon
  • Red Chillies  powder  1 teaspoon
  • Kabab Chinni powder  1 teaspoon
  • Piplee powder  1 teaspoon
  • Ajwain 1/4 teaspoon
  • Mustard powder 2 teaspoon
  • Naushader 1 teaspoon
  • Cumin powder 1 teaspoon
  • Red Chillies powder 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Green Chillies crushed 3-4 for raita
  • Fresh Mint leaves crushed 1 bunch for raita
  • Fresh Coriander leaves crushed 1 bunch for raita
  • Beaten Yoghurt 1 cup for raita

Procedure:
  • Fry onion in oil till golden brown.
  • Remove fried onion from oil, cool and grind.
  • Now add grinded fried onion, ginger garlic pastes, lemon juice, mustard oil , raw papaya paste  and spices to the 1/4 cup of yoghurt , mix well to make a paste.
  • Apply this paste to the Beef Cubes and keep aside to marinate for 3-5 hours.
  • Now insert marinated beef cubes on skewers/seekh and grill over charcoal fire till tender.
  • Delicious Bihari Boti is ready.
  • Serve with Mint Raita and Roti.
  • Mix crushed green chillies, mint leaves and coriander leaves to the beaten yoghurt to make Mint raita)

Gehaktballen (Dutch Meatball Dish) ڈچ کوفتے / نیدرلینڈ - ہالینڈ کے کوفتے

We were celebrating Eid ul Azha past week. Every house have a lot of meat stored in their refrigerator. I decided to make a Dutch (Netherlands - Holland) dish Gehaktballen to give a different taste to my family and friends. It is a very popular dish of Netherlands. I wrote to a Dutch friend  https://www.facebook.com/irmgard.sandersenoordman for tips and recipes. Although she was in Hospital at Ulm Germany she send us her mothers recipes and serving suggestions.  We dedicate our this recipe to her Family and pray for her and her son Thomas's good health.

Gehaktballen
Ingredients for meatball:

  • Beef , boneless cubes    1 kg
  • (I am not using minced meat, normally minced meat is used)
  • Butter/Oil  4-8 tablespoon
  • Onion chopped 2
  • Egg beaten 1
  • Bread slices  2-3
  • Salt to taste
  • Black pepper 1 teaspoon
  • Nutmeg 1/4 teaspoon
  • Mustard powder 2-3 teaspoon
  • Paprika powder  1/2 teaspoon

Serving:

  • Boiled potatoes  mashed 4-5
  • Boiled spinach   2-3 cup
  • Bread  slices as needed
         Potatoes and spinach should be boiled with some salt.

Procedure:

  • Mix together beef cubes, onions chopped, egg, bread slices, salt and spices.
  • Then process in an electric food processor/chopper  to a smooth texture.
  • Now make tennis ball size meat ball from this mixture. Keep aside.
  • Heat butter in a pan and fry these meatball in it on medium flame till tender in portions  or one by one.
  • Delicious Gehaktballen are ready to serve
  • Now add little water to the remaining butter and leftover to make a sauce.
  • Boil potatoes and boiled spinach can be mixed together for serving or can be serve separately.
  • Serve with butter sauce, boiled potatoes , boiled spinach and bread.

Bihari Keema / Bihari Qeema بہاری قیمہ

Today is Eid ul Azha . Happy Eid Mubark to all Muslims around the world. 
On this Eid day I would like to share Bihari Keema Recipe. 
Bihari Keema is a very tasty and mouth watering dish.

Bihari Keema
Ingredients:

  • Minced Beef (Keema)   1 kg
  • Oil 1 cup
  • Raw papaya freshly crushed   2-3 tablespoon
  • Onion  chopped  2-3
  • Ginger paste   2 teaspoon
  • Garlic paste 2 teaspoon
  • Yoghurt  1 cup
  • Salt to taste
  • Haldi powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon

Roasted Ingredients:

  • Red Chillies whole    6-10
  • Coriander whole  1 teaspoon
  • Cumin whole 1 teaspoon
  • Poppy seeds soaked in water 2-3 teaspoon
  • Desiccated coconut  1 tablespoon


  • Fresh Mint leaves for garnish
  • Green Chillies for garnish    2-4
  • Burning coal 2-3
  • Butter 1 teaspoon

For Serving:

  • Paratha as required   10-15
  • Onion ring/shredded a bowl
  • lemon wedges as required
  • Mint Chutney

Procedure:

  • Mix minced beef and  crushed raw papaya together and keep aside for 1 hour to marinate and tender.
  • Now fry onion in oil till golden brown. remove cool and grind. Keep aside.
  • Dry roast whole red chillies, coriander whole, cumin whole, desiccated coconut on  low heat. Cool and grind. Keep aside.
  • Grind soaked poppy seeds and lightly roast and keep aside.
  • Now heat oil in a pan.
  •  Add garlic ginger fry for a minute, then add spices like salt,  haldi, cumin and coriander powder and dry roasted spices and poppy seeds. Also add yogurt and fry for 2-3 minutes. Then Add  marinated minced beef and grinded brown onion , fry for 3-5 more minutes.
  • Continue to cook till minced beef is well done.
  • Evaporate excess water on high flame.
  • Garnish with Mint leaves and green Chillies.
  • Now  place burning coal in a aluminium foil piece on top of prepared keema. Add butter on coal and immediately close the lid. Simmer for 5-7 minutes.
  • Delicious Bihari Keema is ready.
  • Serve with Paratha, Mint chutney, lemon wedges and onion shreds.

Galawat Ke Kabab گلاوٹ کے کباب

Galawat Ke Kabab are a delicious  and mouth watering Kabab which melts in your mouth. This is a specialty of Lucknow(لکھنؤ ) . Many peoples of Lucknow  migrated to Karachi during creation of Pakistan.

Ingredients:

  • Keema(Qeema/Minced Meat)   1/2 kg
  • Raw papaya grinded  1 tablespoon
  • Onion finely chopped 1
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Fresh Coriander leaves finely chopped 2 tablespoon
  • Fresh Mint leaves finely chopped  2 tablespoon
  • Green Chillies  finely chopped   3-4
  • Oil for shallow fry
  • Egg (optional) beaten 1
  • Salt to taste
  • Red Chillies 1 teaspoon
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Garam Masala powder 1 teaspoon
  • Poppy seeds soaked and grinded  1 tablespoon
  • Black pepper powder 1 teaspoon
  • Roasted Gram skinless, grinded  1 tablespoon or
  • Chickpea dal dry roasted and grinded

Procedure:

  • Mix all ingredients to the minced meat , dough well and keep aside for 1 hour to marinate and tenderness.
  • Now make 2-3 inch size round patties and shallow fry till tender and golden brown.
  • Delicious Galawat Ke Kabab are ready.
  • Serve with Paratha, Mint Chutney/Raita and Onion shredded.

Gobhi Gosht (Caulflower with Beef) گوبھی گوشت

Gobhi Gosht is a popular dish, good in taste and aroma.

  گوبھی گوشت

Ingredients:

  • Beef with bones 1/2 kg
  • Phool Gobhi (Cauliflower), chopped 1/2 kg
  • Tomatoes chopped 2-3
  • Onion chopped 2
  • Ginger paste 2 teaspoon
  • Garlic paste 1 teaspoon
  • Oil 1 cup
  • Fresh Coriander leaves for garnish
  • Salt to taste
  • Red Chillies powder  1 teaspoon
  • Coriander powder 1 teaspoon
  • Haldi powder 1/2 teaspoon
  • Garam Masala powder 1 teaspoon


Procedure:

  • Fry onion in oil till golden brown.
  • Add beef fry for 2 minutes then add tomatoes, ginger garlic pastes, and spices except garam masala.
  • Fry for 5 minutes, then add  2 cup water and cook on medium flame till beef is tender.
  • Now add phool gobhi cook for 2-3 minutes on high flame then lower the flame and cook on low heat till phool gobhi is tender.
  • Sprinkle garam masala and garnish with fresh coriander leaves and simmer.
  • Delicious Gobhi Gosht is ready.
  • Serve with chapati.
Note:  Melted butter/Desi ghee can be added when served to enhance flavour and taste.

Shikampuri Kabab شکم پوری کباب

Shikampuri Kabab are very very tasty and delicious form of  Kabab with centre of kabab filled with a mouth watering filling/stuffing of hung yoghurt with herbs and spices.

Shikampuri Kabab

Ingredients For Patties:
  • Meat Cubes  1/2  kg
  • Channa Dal   100 gram
  • Egg beaten 2
  • Oil fry shallow frying
  • Onion chopped 2 medium size
  • Garlic crushed one medium pod
  • Ginger crushed 2 inch long piece
  • Green Chillies chopped  2-3 nos.
  • Fresh coriander leaves 1/2 cup chopped
  • Red Chilli whole    6-8 (or more) nos.
  • Cloves Whole     10 nos.
  • Cardamom green whole   10-12 nos.
  • Cardamon brown whole 2 nos
  • Cinnamon stick  2 pieces
  • Black pepper whole 12 nos
  • Cumin seed whole 1 teaspoon
  • Coriander whole 1 teaspoon
  • Salt to taste

Ingredients For Filling:
  • Prepare filling/stuffing by adding all the filling ingredients to hung yoghurt and mix well. Keep aside.
  • Hung yoghurt  1 cup
  • Onion finely chopped 1
  • Fresh Coriander leaves chopped 1 tablespoon
  • Fresh Mint leaves chopped 1 tablespoon
  • Green Chillies chopped 3
  • Salt 1/2 teaspoon
  • Black pepper powder 1/4 teaspoon
Filling/stuffing For Shikampuri Kabab

Procedure:
  • Prepare filling/stuffing by adding all the filling ingredients to hung yoghurt and mix well. Keep aside
  • Thoroughly wash and soak  channa dal in water for 1/2 hour.
  • Take 2-4 glass of water in a pan , add channa dall, garlic, ginger, onion , meat cubes and spices and cook on medium flame till meat and dal are tender.
  • Evaporate the water and grind the remaining mixture.
  • Add egg, green chillies, fresh coriander leaves to this mixture and knead well.
  • Make round flat Shami Kabab, insert a teaspoon of filling/stuffing to the centre of it and shallow fry on low heat till golden brown.
  • Delicious Shikampuri  Kababs are ready
  • Serve with rice/biryani ,salad and  raita.

Dam Ke Kabab دم کے کباب

Dam Ke Kabab are  very tangy and tasty kabab prepared in a pot. 

Dam Ke Kabab  دم کے کباب

Ingredients:
  • Minced Meat (Keema/Qeema)   1/2 kg
  • Oil 1/2 cup
  • Yoghurt 1/2 cup
  • Onion chopped 2
  • Ginger paste 1teaspoon
  • Garlic paste 1teaspoon
  • Raw Papaya crushed  1 tablespoon
  • Green Chillies chopped 3-4
  • Fresh Coriander leaves for garnish
  • Fresh Mint leaves for garnish
  • Burning coal for smoke flavour  2-3
  • Salt to taste
  • Red Chillies powder 1 teaspoon
  • Red Chillies whole 3-4
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Black pepper powder 1/2 teaspoon
  • Garam Masala 1/2 teaspoon
  • Sesame seed 1 teaspoon
  • Coconut chopped 1 teaspoon
  • Poppy seeds 1 teaspoon
Salad:
  • Lemon wedges
  • Onion shredded 
  • Mint raita
Procedure:
  • Dry roast sesame, poppy seeds and coconut separately , cool and grind. Keep aside.
  • Apply crushed papaya to the minced meat and keep aside for 1/2 hour.
  • Now fry onion in oil till golden brown. 
  • Add garlic, ginger, papaya coated minced meat, yoghurt  and spices and grinded and roasted poppy, sesame and coconut.  Fry for few minutes. Then continue to cook on low heat till minced meat is fully done.
  • Garnish with green coriander and mint leaves and green chillies and put on top burning coal placed on a piece of bread/onion cup and immediately put on the lid. Simmer for 15 minutes.
  • Delicious Dam Ke Kabab are ready.
  • Serve with Salad , mint raita and paratha.

Kofta Biryani کوفتہ بریانی

Here is a delicious Rice Dish for Eid ul Fitr " The Kofta Biryani". Try this on the coming Eid days and enjoys.

Kofta Biryani is a very tasty and different style of Biryani.  Kofta are much smaller in size than the regular kofta , around 1/2  to 3/4 inch in size.

Kofta Biryani  کوفتہ بریانی

Ingredients:

  • Minced Meat 3/4 kg
  • Rice , silky polished basmati  1/2 kg
  • Oil 1cup
  • Yoghurt 1 cup
  • Onion chopped 2
  • Tomatoes chopped 2
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Green Chillies   3
  • Fresh mint leaves 1 tablespoon
  • Fresh coriander leaves 1 tablespoon
  • Yellow food colour 1 pinch


Powder spices:
  • Salt to taste
  • Red Chillies powder 1 teaspoon
  • Haldi 1/2 teaspoon
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Garam Masala 1 teaspoon
  • Poppy seed , soaked then crushed  1 teaspoon
  • Roasted gram powder 1 tablespoon


Whole spices:
  • Cumin seed whole 1 teaspoon
  • Black pepper whole 15
  • Cardamom green 5
  • Cardamom brown 2
  • Cloves whole 8
  • Cinnamon sticks 4


Procedure:

  • Mix together powder spices and make two portions.
  • Boil rice in six glass of water with 2 teaspoons of salt added to it, till near to cook. ایک کنّی رہنے تک ابالیں.
  • Drain and keep aside.
  • Now mix 1 portion of powder  spices, 1/2 quantity of ginger garlic paste and mint and coriander leaves to the minced meat. Knead well. Then process in an electric processor for a smooth texture.
  • Make 1/2 - 3/4 inch diameter ball from this well kneaded meat. keep aside.
  • In another pan, fry onion in oil till golden brown. 
  • Add remaining ginger garlic paste fry for 1 minute then add remaining  portion of powder spices, tomatoes, whole spices , green chillies and yoghurt and fry for 5 more minutes.
  • Add 2 glass of water and cook for 10 minutes on low flame, then add prepared meat balls and continue to cook till meat is tender and very gravy becomes thick.
  • Sprinkle fresh mint and coriander leaves.
  • Now spread  the boiled rice at top of prepared kofta curry, sprinkle yellow food colour on top of rice. Simmer for 10-15 minutes.
  • Delicious Kofta Biryani is ready.
  • Mix well before serving.
  • Serve with yoghurt mint raita and salad.
