When I was in Final year of my Master Degree (1989), Dr Rashda Ali was the Section In-charge of Food Science at Applied Chemistry. She was trying her best to establish a new Department of Food Science and Technology. Her dream becomes true, now there is a beautiful building of Food Science and Technology Department of Karachi Univesity.

Dr Abid Hasnain is the present Chaiman and
Dr Asad Saeed was the previous Chairman both of them were the student of M. Phil on those day when we were studying there. My son recently took photograph of this building and we are sharing it here.

Home Made Orange Marmalade اورنج مارمیلڈ

Home Made Orange Marmalade

Orange Marmalde is a very delicious choice for your breakfast spread. It is full of vitamin C. You can made Orange marmalade at your home.  In Pakistan orange season starts from December and ends in February.
You can try my following simple recipe at home.





Ingredients:

• Oranges   4
• Sugar same measure as orange pulp
• Orange zest thinly sliced from 2 oranges
• Lemon Juice from  1 lemon
• Water  1 glass

Procedure:

• Extract orange juice/pulp with the help of electric citrus press, remove seeds from the leftover material at top of sieve. Add this pulpy material to juice. measure its quantity.
• Take the same quantity of sugar and add to juice/pulp.
• Take  orange juice/pulp and sugar in a heavy bottom pan, add lemon juice and water.
• Cook on medium flame till  thick with constant stirring.
• Delicious and Citrus Home Made Orange Marmalde is ready.
• Fill in neat and dry bottle while hot. Consume as desired.
• It is free from artificial  colouring and flavours.

Food Additives With E Numbers Halal or Haram

I am a Food Technologist by profession. Most of my friend and family member and other peoples are asking me verbally, by e mail or through friends that we have purchased a product with E number mentioned on label. Is it Haram or Halal.  Even I noticed in some newspapers in past that the products with E numbers mentioned on label are Haram. I wants to explains some points here.

What are Food Additives.

• Chemicals are  often added to foods as preservatives, to add colour, to help different food substances combine in processed food (e.g. cakes and biscuits). and to enhance the taste and texture of food. These chemicals are known as additives.Most additives included in a product must be listed on the packaging label.

• Additives which have been approved usually have numbers. Those with E numbers have been approved by European Union .
• Therefore all the food additives with E numbers are not Haram, however some food additives with E numbers are Haram. Mainly those  food additives derived from animal source which are Haram themself. No mineral sourced  colour or food additives is Haram. Only animal sourced animal derived from Haram Animals are Haram.

As E numbers are approved from European Union, American products are normally approved by FDA, and mentioned as FD&C numbers.  If Muslims countries jointly decided to have food additives safe for Muslim consumers they can use  M or I or H before an approved Muslim or Islamic or Halal Food Additives and Non Food additives (used in drugs/cosmetics/and household items)
