Spring Rolls/ Keema Rolls/Qeema Rolls for Ramadan اسپرنگ رول

Spring Rolls are very delicious and mouth watering snack for Ramadan at Iftar. These are made with different filling like vegetables, chicken, boiled eggs and meat with vegetables. All varieties are popular and tasty.



Ingredients For Patti/ wrap (uncooked roti/phulka):

  • Maida (Wheat starch)  2 cup
  • Salt 1/2 teaspoon
  • Cold water as required
Procedure: 

  • Add salt to maida, then add some water and knead well.
  • Make small walnut size doughnut from kneaded maida.
  • Now make square thin breads/patti/wrap  with the help of roller pin, add dry maida during rolling.
  • Keep aside till filling is ready.
Ingredients for Spring  Roll Filling:
  • Minced Chicken   250-300 g
  • Cabbage finely chopped  100g
  • Oil 2 tablespoon
  • Onion chopped 1
  • Tomato finely chopped 1
  • Spring onion chopped 2-3
  • Ginger paste 1 teaspoon
  • Garlic paste 1teaspoon
  • Green Chillies chopped 2
  • Fresh Coriander leaves chopped 1/4 cup
  • Vinegar 1 tablespoon
  • Soy Sauce 1 tablespoon
  • Salt to taste
  • Chilli powder 1 teaspoon
  • Haldi 1 teaspoon
  • Coriander powder 1 teaspoon
  • Cumin whole 1 teaspoon
  • Black pepper powder 1/4 teaspoon
Procedure for Spring Roll filling Cooking:
  • Sauté onion in oil, then add minced chicken, ginger garlic paste, tomatoes, chilli powder, haldi powder, coriander powder and salt. Cook on medium flame for 10-12 minutes.
  • Evaporate water on high flame then add cabbage, spring onion, cumin seed, black pepper, vinegar and soy sauce.
  • Cook for 5-6 minutes, then add green chillies and fresh coriander leaves and simmer for 2-3 minutes then cool.  Filling for Spring Rolls is ready.

Procedure For Spring roll filling:
  • At first make a gumming paste by adding water to 1/4 cup of wheat flour. This will be used as a pasting material in roll moulding/making.
  • Take 1 piece of square patti/wrap , place 2-3 teaspoon of filling on it (filling should be place in length diagonally).
  • Start rolling from bottom corner, when reached at filling place, fold diagonal corners over filling. Continue to roll ill last upper corner is reached. Apply gummy paste just before end of rolling. 
  • Prepare other rolls in the same way.
Frying of Filled Spring Rolls:
  • Heat enough oil in a Karahi, Fry rolls till golden brown.
  • Delicious Spring Rolls are ready.
  • Serve hot with tomato ketchup at Iftar

Aaloo Ki Kachori آلو کی کچوری

Aaloo Ki Kachori is a tasty snack served with Aloo Ki Bhujia or Kabli Channay Ki Bhujia. It is usually served as a supporting dish on weddings.



Ingredients For Kachori:
Maida   1/2 kg
Suji  2 tablespoon
Salt to  1/2 teaspoon
Baking Soda 1/2 teaspoon
Oil for frying

Procedure for Dough:
Add suji,  salt and baking soda to the maida, then add enough water to make a fine dough.
Keep aside for 30 minutes

Ingredients For Filling:
Boiled Potatoes   3-4
Salt to taste
Chilli powder to taste
Ajwain 1/2 teaspoon
Imli Ka paste  1 teaspoon
Green Chillies paste  1 teaspoon
Fresh coriander leaves finely chopped  1 teaspoon
Cumin seed whole 1/2 teaspoon

Procedure for Filling
Coarsely mash potatoes add all spices and mix well. Keep aside.

Procedure For Kachori:
Make small balls from dough.
Take a dough ball and flat  it 3-4 inch round, place a small portion of filling on it, then surround it with surrounding dough to seal filling. Round then flat again. Make more Kachori in the same way.
Now heat oil in a Karahi, slip one by one 3 to 4 Kachori in it from the side of the Karahi. Deep Fry till light golden.
Kachoris are ready.
Serve hot with Aaloo Ki Bhujia or Channay Ki Bhujia.

Creme Caramel/Egg Pudding/Custard Pudding کریم کیرامل

Creme Caramel is a very delicious and full of nutrition dessert. Some 25 years backs peoples knows it as Egg Pudding, when Caramel sugar starts pouring over Egg Pudding it becomes Creme caramel. I was working at National Food Limited, Karachi, and Pudding Mix was their branded product. American when using custard powder instead of egg, they say it Custard Pudding. When I joined Ahmed Food Ltd, Karachi, It was Creme Caramel, Pudding Mix packed with a sachet of Creme Caramel. Commercially no egg is used in formulation or Pudding Mix or Creme caramel, they are using modified starches or gums.

Here I am writing a very simple recipe of  Egg Pudding  or Creme caramel. You can use Caramel sugar syrup during cooking or can be poured over prepared Egg Pudding.








Ingredients For  Egg Pudding:

  • Egg      2 no.
  • Sugar 4-5 teaspoon
  • Milk  250 ml
  • Butter for glazing/lubricating  moulds

Procedure:

  • Beat eggs in a pan with the help of hand beater. Keep aside.
  • Now glaze moulds with butter and keep aside.
  • Now on a low flame warm milk in a pan add sugar, stir to dissolve. (Do not boil the milk only warm on low flame for 2-4 minutes)
  • Take out from flame, add this milk to beaten egg with constant stirring.
  • Fill in the pre-lubricating moulds, apply aluminium foil or poly bags with rubber band or glass lid on the top of the mould.
  • Place these moulds in a pan/steamer with enough water to dip half height of moulds and muslin cloth placed on bottom of pan to avoid bubbling. Close the top of the pan with an airtight lid. Cook in steam for 15-20 minutes.
  • Remove the moulds from steamer/pan. Cool , then place in a refrigerator for 30-45 minutes.
  • Loosen the prepared Egg Pudding with knife, place a serving plate on top, then invert.
  • Egg Pudding is ready. Serve as it is or pour caramel sugar syrup on top to enjoy the taste of Creme Caramel.

How To Prepare  Caramel  Sugar:

  • Take 4 tablespoon  sugar and 1 tablespoon water in a non stick frying pan and cook on medium flame till it starts changing colour. Stop cooking when required caramel colour of your choice is obtained. At last add 1 tablespoon of warm water carefully to thin this caramelized sugar.
  • Caramel Sugar Syrup is ready.
  • It can be pour over prepared Egg Pudding or can be used at bottom of the mould before cooking.

Ice Cream Syrup آئس کریم سیرپ

Ice Cream Syrup is a green coloured syrup of Ice Cream flavour. A Pakistani Company Quice Food Industry Brand Ice Cream Syrup is the only brand which got popularity. Other companies also introduced their brands but can not survive in market against Quice Ice Cream Syrup.
You Can make this syrup at your home very easily.




Ingredients:
  • Sugar 1kg
  • Tatri 1 pinch
  • Rose water 1 cup
  • Ice cream flavour  few drops
  • Green Food colour 1 small pinch
Procedure:
  • In a pan add sugar, citric acid  and rose water.
  • Cook on medium flame till boil, after few boils a clear syrup with obtained.
  • Cool then add colour and flavour. Mix well.
  • Ice Cream Syrup is ready.
  • Take 3 teaspoon of this prepared syrup in a glass add ice chilled water and enjoy.

Aaloo Anda Curry (Potato with Eggs) آلو انڈے کا سالن

Aaloo Anda Curry is a very simple and poor man's curry who can not afford costly vegetable and meat or pulses. Egg provides him protein and potatoes carbohydrates.



Ingredients:
  • Eggs (boiled)   6 no.
  • Potatoes quartered 3-4 medium size
  • Tomatoes chopped 2-3
  • Onion slices 2 medium size
  • Garlic paste   1 teaspoon 
  • Ginger paste   1 teaspoon
  • Fresh Coriander leaves for garnish
  • Oil     1 cup
  • Salt to taste
  • Chilli powder 1 teaspoon
  • Haldi powder   1/2 teaspoon
  • Coriander powder   1 teaspoon
  • Garam masala    1 teaspoon

Procedure:

  • Saute onion in oil, remove and grind, and keep aside. 
  • Now add ginger garlic paste in the same oil, cook for 1 minutes.
  • Then add tomatoes and all spices accept garam masala.
  • Cook for another 1-2 minutes.Then add grinded onion and fry for 1-2 more minutes.
  • Now add potatoes, fry for 2-3 minutes and add 1-2 cup water and continue to cook till on low  flame potatoes are tender.
  • Sprinkle garam masala and fresh coriander leaves, introduced boiled eggs slowly and simmer for 5-10 minutes.
  • Delicious Aaloo Anda Curry is ready.
  • Serve with Roti.

Aaloo Ki Katlian آلو کی کتلیاں

Aaloo Ki Katlian is a very simple dish, when you have only potatoes and some spices and oil in your kitchen.  It is cooked in 10-15 minutes only. It is the only dish which Ayesha , my 13 years old daughter, can cook. This is her first dish to be loaded on Cuisine of Karachi blog.


Ingredients:

  • Aaloo (potatoes) cut in small triangular slices       2
  • Oil        2 tablespoon  
  • Salt       to taste
  • Red chilli powder    1/2 teaspoon
  • Haldi      1/4 teaspoon
  • Water      4 tablespoon

Procedure:

  • Take oil in a pan. Put Aaloo in it and cook for 1 minute.
  • Add all the spices and water, and cook for 10 minutes on a low flame.
  • Delicious Aaloo Ki Katlian are ready.
  • Serve  with Roti.

Sabudana Kheer (Sago dana Kheer) سابودانہ کھیر

Sabudana Kheer is a delicious and healthy dessert.

 

 

Ingredients:

  • Milk           1/2 litre 
  • Sabudana           2 tablespoon
  • Rice crushed            2 tablespoon
  • Sugar               3 tablespoon
  • Raisen               2 teaspoon
  • Kewra Essence            few drops

Procedure:

  • Soak sabudana in 1 cup water for an hour.
  • In the same water boil sabudana for 15-20 minutes.
  • Now add all other ingredients and cook on low flame till thick.
  • Pour in serving bowls.
  • Cool and serve.
