Afza Syrup (Lal Sharbat of The East) شربت روح افزا

Afza Syrup is reffered to the Red coloured syrup of the Sub Continent (Pakistan, Bangladesh and India). Hamdard Dawakhana of Pakistan and India are the pioneers of this product. It is one of the most popular summer time drink of this region of the world. There brand name is Rooh Afza. However Naurus and Jam e Shireen are also getting place in Market.



The Main ingredient of this syrup is sugar. Sugar is converted into glucose and fructose by adding little citric acid during cooking with water. Arqiyat (water distilates) of Kewra, Rose, Sandal wood, some water distilates of vegetables like carrot and coriander, some fruit distilates of like apple are also used. Those fruits and vegetables are selected which imparts cooling and refreshing impact in summer. Some  herbs having cooloing and thirst quinching properties are also used like Khus. Artificial flavours and colours are also used. 

In industries like Hamdard, automatic cooking and cooling plants are involved in manufacturing of this surup. You can also made this syrup at your home  by my this simple recipe.

Ingredients:

  • Sugar  1 kg
  • Tatri (citric acid) 1 pinch
  • Rooh Kewra  1/2 cup
  • Rose water 1/2 cup
  • Sandal wood oil few drops
  • Red Food Colour 1 pinch
Procedure:

  • In a pan take sugar add Rooh kewra and Rose water , cook on medium flame till boil after 1-2 boils add tatri and continue to cook till clear sugar syrup is obtained.
  • Remove from flame cool
  •  Add Sandal wood oil, Rooh kewra, Rose water and adjust colour.
  • Afza syrup is ready. Enjoy adding 2-3 teaspoon of prepared syrupp to chilled glass of water.
  • Instead of tatri lemon juice ( 1 teaspoon) can be used.
  • Artificial flavours can also be used if  Rose , Kewra and Sandal water/oil are not available.

Dal Gosht دال گوشت

Dal Gosht is a very delicious dish.



Ingredients;

  • Dal Channa boiled 1 Cup
  • Mutton 1/2 kg
  • Onion chopped 2
  • Tomatoes chopped 2
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Oil 1 cup
  • Green Chillies 1-2
  • Fresh Coriander leaves for garnish
  • Red Chilli powder to taste
  • Salt to taste
  • Haldi powder 1/2 teaspoon
  • Coriander powder1 teaspoon
  • Garam Masala 1 teaspoon
  • Cloves whole 4-5
Procedure:
  • Fry onion in oil till golden brown.
  • Add mutton and fry for 5 minutes.
  • Add tomatoes, ginger garlic pastes, and all spices and then fry for 5 minutes.
  • Add 1 glass water and cook on medium flame till meat is tender.
  • Now add boiled dal and 1/2  glass water and cook for further 5-10 minutes.
  • At last add green chillies and fresh coriander leaves and simmer.
  • Delicious Dal Gosht is ready. Serve with Roti or Boiled/fried rice and salad and pickle.
