Sayadiyah Fish صيادية السمك (Fish and Rice)

It is a very very tasty and delicious fish with rice recipe from the Arab world.

Sayadiyah
Ingredients:
For Fish:

  • Fish fillets   1 kg
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Lemon juice 2-3 teaspoon
  • Chopped fresh dill leaves 1 tablespoon
  • Chopped fresh coriander 1 teaspoon
  • Chopped tomatoes 1
  • Salt to taste
  • Red chillies powder 1 teaspoon
  • Turmeric powder 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Cumin powder 1/2 teaspoon
  • Bharat powder/ curry powder 1 teaspoon

For Rice:

  • Basmati Rice 1/2 kg
  • Onion chopped 2
  • Oil 1 cup
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Salt 2 teaspoon
  • Red chillies powder 1/2 teaspoon
  • Black pepper whole 1teaspoon
  • Cumin seeds whole 1 teaspoon
  • Cardamom large 3
  • Cardamom small 12
  • Raisin 1 tablespoon
  • Cloves whole 10


Garnish:

  • Dry roasted pine nuts
  • Golden fried Onion
  • Butter shallow fried tomato wedges

Procedure:
For Rice
  • Soak rice in water for 1/2 hours.
  • Wash and drain. keep aside.
  • Now in a cooking pan fry onion till golden brown.
  • Add spices fry for 2 minutes.
  • Then add rice and 2-3 glass water, water should be 1 inch above the rice layer.
  • Cook on medium heat till rice are done.
  • Sayadiyah Rice are ready 

For Fish

  • Mix all the ingredients together then apply on fish fillets and keep in dark or refrigerator for 3-4 hours to marinate.
  • Then fry in hot oil till tender.
  • Delicious Sayadiyah Fish is ready.
  • Serve with Prepared Sayadiyah Rice

How to serve:

  • Arrange prepared Sayadiyah Rice in a platter.
  • Put on prepared Fish pieces.
  • Garnish with roasted pine nuts, fried golden onion and butter fried tomato wedges.

Sambousek (Arabian Snack) سمبوسك

Sambousek is one of the most popular snack in Arab world. From Saudi Arabia to UAE, Kuwait, Lebanon, Syria, Jordan, Iraq and Egypt.  Try this recipe for Iftar this Ramadan and feels a touch and love with Arab world.

Ingredients For Dough:

  • Super Fine Wheat flour/starch (Maida)  1/4 kg
  • Salt  1/4 teaspoon
  • Cumin seeds 1/4 teaspoon
  • baking soda  1/4 teaspoon
  • Zaatar 1/2 teaspoon


Ingredients For Filling:

  • Minced lamb/Mutton 250g
  • Oil 1/4 teaspoon
  • Tomatoes chopped 1
  • Onion chopped  1
  • Parsley chopped 1 tablespoon
  • Green chillies chopped 1-2
  • Salt to taste
  • Black pepper 1/2 teaspoon
  • Cardamom powder 1/2 teaspoon
  • Sumac powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon
  • Pine nuts  a few


Procedure For Filling Cooking:

  • Fry onion in oil till golden, then add tomatoes, and spices fry for 3 minutes.
  • Now add minced meat and fry for 5 more minutes, then add a cup water and continue to cooking till meat is tender. Evaporate excess water by increasing flame with constant stirring.
  • Now sprinkle green chillies, pine nuts and parsley.
  • Simmer and then cool. 
  • The Filling for Sambousek is ready.

Preparation and frying of Sambousek:
  • Add salt,  cumin , baking soda and zaatar to the flour and mix well. Then add little water to make a hard dough. Keep aside for 30 minutes in a cool and dry place.
  • Now make dough ball, wall nut size, from the prepared dough.
  • Take a dough ball flat it 3-4 inch diameter round  with the help of roller pin and board.
  • Place a small quantity of filling on it then fold to make semicircle shape.
  • Seal the open ends with the help of fork.
  • Make more sambousak from remaining dough.
  • Now heat oil in a deep frying pan, add 3-4 sambousek at a time and fry till golden in colour.
  • Delicious and tangy Samousek are ready.
  • Serve at Iftar with tomtot ketchup or chutney.

Ful Medames (Egyptian National Dish) فول مدمس

Ful Medames is a National Dish of Egypt. It is mostly consumed as a breakfast dish. Ful Medames is also popular in Ethiopia, Syria , Lebanon and Saudi Arabia.

Fava Beans Dried

Soaked and Drained fava Beans
Ingredients:

  • Fava Beans Dried  2 cup
  • Garlic crushed 2 teaspoon
  • Onion chopped 1/2
  • Salt to taste
  • Black pepper powder 1-2 teaspoon
  • Cumin powder 1 teaspoon
  • Lemon Juice  2 tablespoon

Garnish:

  • Olive oil  as desired
  • Tomatoes diced
  • Spring onion chopped
  • Green Chillies finely chopped
  • Hard Boiled eggs discs
  • Parsley chopped
  • Lemon wedges as desired

To Be Served with:

  • Pitta Bread
  • Pickled Olives
  • Pickled white onion

Procedure:

  • Soak and drain s fave beans overnight.
  • Now take soaked and drained fava beans in a pan, add garlic, onion and salt and spices and 2-3 glass water and cook on simmering heat till beans are tender (45-90 minutes).
  • Serve beans as whole or slightly mashed.
  • Add lemon and olive oil then simmer for 5 minutes.
  • Delicious Ful Medames is ready.
  • Serve in a serving plate with pitta bread and garnish, along with pickled olives and pickled onion.

Arabian Hot Dog العربي هوت دوغ

Arabian Hot Dog is an Arabian version of hot dog. It is a try to give an Arabian touch to regular and world popular hot dog snack. It very delicious and Tangy.





Ingredients:

  • Pitta Bread   4
  • Frank sausage (ready to serve)  4
  • Lettuce Leaves (new and fresh)     8
  • Cheese slices 4
  • Tahina sauce as desired
  • Mayonnaise as desired
  • Ketchup  as desired
  • Pickled Olives slices as desired
  • Tomato slices as desired
  • Pickled or fresh cucumber slices as desired


Procedure:

  • Toss pitta bread on skillet.
  • Apply mayonnaise, then put lettuce leaves, Cheese slices and sausage.
  • Sprinkle Tahini sauce, tomato ketch up.
  • Insert tomato and cucumber slices and finally sprinkle olives slices.
  • Delicious Arabian Hot Dog is ready
  • Roll and serve. Apply extra Ketchup if required.
  • Hummus can also be used with Lebanese salad and tabbouleh.

World Famous hot Dog snack is liked by everyone, very simple to prepare at home.




Ingredients:

  • Hot dog buns 4
  • Frank sausage (ready to use) 4
  • Lettuce leaves fresh  8
  • Pickled cucumber (or fresh cucumber) as desired
  • Tomato slices as desired
  • Mayonnaise as desired
  • Mustard sauce as desired
  • Cheese slices 4
  • Tomato Ketchup as desired


Procedure:
  • Slit buns along length.
  • Apply Mayonnese on both sides.
  • Place 2 Lettuce leaves, Then 1 Frank Sauces, then 1 cheese slice, Insert Cucumber , tomatoes.
  • Apply Mayonnaise, Mustard sauce and Tomato Ketchup and serve.

Tahini Sauce (Turkey/Syria/Iraq)

Tahini Sauce is one of the most popular sauce after Hummus in Middle East. It is also  known as Mayonnaise of Middle East. It goes well with Sandwiches, Falafel.




Ingredients:
  • Tahini  1 cup
  • Lemon juice 2 teaspoon
  • Garlic crushed  3 cloves
  • Salt to taste
  • Olive Oil   1/4 cup
  • Black pepper powder 1/4 teaspoon
  • Red pepper powder 1/8 teaspoon
  • Fresh Parsley/Coriander leaves 1 tablespoon


Procedure: 

  • Combine all ingredients together and mix well.
  • Delicious Tahini Sauce is ready.
  • Serve as desired.

Prepared Ingredients for Tashreeb



Ingredients:

  • Mutton Chops  (3 chops chopped together)   1 kg
  • Arabian bread or pitta bread  (chopped in 4 pieces and crunched with olive oil)  2 nos.
  • Yoghurt (beaten)  1/2 kg
  • Garlic (cloves de-skinned and halved)  1 medium size
  • Fresh Parsley/Coriander leaves 1/2 cup
  • Onion de-skinned and quartered  4 small size
  • Lemon juice  1 table spoon
  • Olive oil  1/2 cup
  • Tomatoes  coarsely chopped 3 nos.
  • Salt to taste
  • Red chilli to taste
  • Cubeb powder  1 teaspoon
  • Black pepper powder  1 teaspoon
  • White pepper powder 1/2 teaspoon
  • Sumak powder   1 teaspoon
  • Pimento powder 1 teaspoon
  • Cloves powder 1/4 teaspoon
  • Cardamom green powder 1/2 teaspoon
  • Cinnamon powder  1/4 teaspoon


Procedure:

  • Thoroughly wash the chops and dry with paper towel.
  • Mix spices together and coat over chops and keep aside for 2 hours to marinate.
  • Now heat oil on medium flame, add yoghurt, garlic, tomatoes, onion and marinated chops.
  • Cook on low flame till chops are well tender.
  • Now add lemon juice, parsley and pitta bread pieces and simmer for 15-20 minutes.
  • Delicious Tashreeb is ready. Serve with Arabian white rice.

Ingredients:

  • Minced meat (Lamb/Chicken)     1/2 kg
  • Onion crushed 1/2
  • Fresh Parsley or Coriander  chopped 1/2 cup
  • Egg   beaten  1/2
  • Garlic cloves crushed 2
  • Olive oil  1 tablespoon
  • Salt to taste
  • Paprika to taste
  • Black pepper 1/2 teaspoon
  • Sumak powder 1/2 teaspoon
  • Pimento powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon
  • Coriander powder 1/2 teaspoon


Procedure:
  • Mix together minced meat , egg, onion, parsley, garlic and spices then grind in an electric food processor/chopper.
  • Now made 12-15 Kafta.
  • Insert pre-soaked wooden skewers and keep aside to marinate.
  • Now brush with olive oil and grill over charcoal fire till tender.
  • Delicious Kafta Kabab are ready serve with crunchy pita bread, salad and mint chutney.

Marag/ Maraq (An Kurdish Dish, Iraq)


Marag/Maraq is a Kurdish, Iraqi dish. I am disclosing below the secret of this original recipe.

Ingredients

  • 1. Mutton   1 -    1  1/2 kg
  • 2. Broad beans (fasoolia)  500 g
  • 3. Oil  1/4 -1/2 cup
  • 4.Tomatoes chopped  2-3 nos.
  • 5. Onion chopped 1-2 medium size
  • 6. Lemon juice  1-2 teaspoon
  • 7. Garlic crushed  one medium pod
  • 8. Parsley leaves for garnish
  • 9. Spices: salt to taste, Pimento powder 1-2 teaspoon, Turmeric 1/2 teaspoon, Cardamon small powder 1 teaspoon, Black pepper 1-2 teaspoon, Cinnamon 1/2 teaspoon, Paprika powder 1/2 teaspoon

Procedure:

  • 1. Heat oil in a pan , add meat and fry for 2-5 minutes.
  • 2. Add onion and garlic and fry for 2-3  minutes till onion is soft.
  • 3. Now add tomatoes and spices and cook on low flame till meat is near to tender, add water if needed.
  • 4. Now add broad beans and lemon juice and cook on medium flame till beans are done and meat is tender.
  • 5. Sprinkle parsley leaves and simmer.






Serve with Boiled rice/Naan/Roti



Kibbe/Kibbi/Kubba Recipe (A Turkish/Iraqi Snack) كبه

Kibbe with various spelling is an Turkish/Iraqi snack, I like it very much, it is nutritious and tasty.

Ingredients for Raw Kibbe

  • 1. burghul (Turkish)    1/2 kg
  • 2. Extra lean minced meat (Beef/lamb/Chicken)    1/2 kg
  • 3. Onion finely Crushed one medium size
  • 4. Mint leaves a few
  • 5. Ice cold water  1 cup
  • 6. Spices ( Salt to taste, paprika 1/4 teaspoon, all spice 1/2 tea spoon, sumuk  1/2 teaspoon, Cinnamon 1/4 teaspoon , cloves 1/8 teaspoon, black pepper 1/4 teaspoon)


Procedure for raw kibbe

  • 1. Soak burghul in cold water for 20-30 minutes.
  • 2. Drain out water and squeeze the soaked burghul.
  • 3. Now add  crushed onion, mint leavs, minced meat and spices to it and knead well , keep aside.  The raw kibbe is ready
  • For fine texture you can crush this mixture in a mincer/grinder. Chopped green chillies 2-3 nos. and 2-3 teaspoon of lemon juice can be added to improve the taste and pungency.


Prepration of Kibbe filling (Stuffing)

Ingredients for filling (Stuffing)

  • 1. Extra lean minced meat   1/2 kg
  • 2.. Burghul  1-2 teaspoon
  • 3. Oil/Butter  1/2 cup
  • 4. Onion finely chopped 1-2 medium size
  • 5. Fresh parsley/celery/corainder leaves   a few
  • 6. Pine nuts  25-75 gram
  • 7. Spices (as same as above)


Procedure for Stuffing Preparation

  • 1. Fry oinio in oil/butter till golden brown.
  • 2. Add pine nuts and fry for 1-2 minutes.
  • 3. Now add minced meat and spices and fry for 5-10 minutes.
  • 4. Add 1-2 cup of water if desired and cook on  medium flame till meat is tender and most of the water dries up.
  • 5. Srinkle fresh parsley leaves and simmer for 5-10 minutes.


  •     The stuffing is ready  (1-2 chopped green chillies,1-2 teaspoon lemon juice can be added to enhance the taste , if you like)


Fried Stuffed Kibbe Procedure

Ingredients

  • 1. Prepared raw kibbe (as preapared above)
  • 2. Prepared stuffing (as preapared above)
  • 3. Oil (Olive/sunflower/Canolla)    for deep frying


Fryning Procedure

  • 1.  Make egg size balls from prepared raw kibbe
  • 2. Make a deep shallow hole in it and fill the hole with stuffing.
  • 3. Seal the whole with raw kibbe and mould the balls into diamond shape.
  • 4. Heat oil in a frying pan and deep fry the preapared stuffed kibbe to a golden brown color.
  • Serve with salad/khubz bread/ tahini sauce/yoghurt raita

Dolma is one of the most popular dish from Iraq to Turkey, Russia to Canada. It is basically a Turkish and Kurdish dish



Ingredients

  • 1. Bell pepper (Capsicum)         12 Nos.
  • 2. Rice washed and soaked in water    75 gram
  • 3. Onion finely Chopped             2 nos medium size
  • 4. Parsley  fresh     1/2 bunch chopped
  • 5. Soy fresh         1/2 bunch chopped
  • 6. Fresh mint       1/2 bunch chopped
  • 7. Spring onion  1-2 nos chopped
  • 8. Tomatoes     2 nos finely chopped
  • 9. Olive oil     1 table spoon
  • 10. Butter        1 and 1/2 tablespoon
  • 11. Lemon juice  from 1/2 lemon
  • 12. Fresh garlic   2-3 cloves crushed
  • 13. Minced Meat (mutton/chicken)   Boiled 1/2 kg
  • Spices :  Salt to taste,  black pepper powder 1/2 tsp, Cumin powder 1/2 teaspoon, Sumuk powder  2 teaspoon, Kababa (Cubeb) powder 1/2 teaspoon, Cardamom powder 1/2 teaspoon


Procedure:

  • Remove the top and seeds of bell pepper and keep aside
  • Mix together rice, onion, tomatoes, olive oil, butter lemon juice, garlic and minced meat and spices.
  • Make a paste by kneading like dough  .
  • Fill the mixture to bell pepper  and  cap with tomatoes.
  • Arrange the filled capsicum in a pan, and pour 1 and 1/2 cup hot water to it and cook on low fire till rice, capsicum  becomes tender (60-90 minutes)
  • Delicious Dolmas are ready serve with pitta bread (Arabian bread)

Bhindi Gosht is a delicious dish. Cooked with  Mutton Chops and Okra. It is very popular dish in Iraqi Kurd area and know as Maraq

 

Ingredients:

  • 1. Mutton Chops  1 kg
  • 2. Bhindi (Okra/Lady finger/Bamiyah)  1/2 kg
  • 3. Onion chopped 2-3 nos.
  • 4. Oil 1 cup
  • 5. Ginger crushed  2 inch long piece
  • 6. Garlic crushed  1 medium pod
  • 7. Tomatoes chopped  2-3 nos.
  • 8. Coriander leaves  a few
  • 9. Spices: Salt to taste, Chilli 1 teaspoon, Coriander 1/2 teaspoon, Turmeric powder 1/2 teaspoon, garam Masala 1/2 teaspoon


Cooking Procedure:

  • Fry onion in oil till golden brown .
  • Add garlic , ginger, tomatoes and fry 1-2 minutes then add mutton and fry for another 5 minutes, then add 2 glass of water and cook on medium flame till meat is tender.
  • Now add okra and cook on low flame till okra is tender then sprinkle coriander leaves and simmer.
  • Delicious Bamia/Maraq/Marag/Bhindi gosht is ready . Serve with Naan /Roti

Ingredients

  • Plain flour   3 cup
  • Sugar          1/2 cup
  • Butter          2-3 tablespoon
  • Water          1/4 cup
  • Green Cardamom powder   1/4 teaspoon
  • Aniseed (Fennel)                   1/8 teaspoon
  • Cinnamon                              1/8 teaspoon
  • Baking powder                        1/4 - 1/2 teaspoon
  • Salt                                           1/8 teaspoon
  • Pimento                                     1/8 teaspoon
  • Rose essence                           a few drops

Ingredients for filling
  • Dates            125 g
  • Butter             2 table spoon

Procedure

  • Pre-heat oven at 170 degree centigrade
  • Sift the sugar and flour in mixing bowl
  • Now add butter to it and mix well to make a smooth mixture
  • Add water to this mixture and knead well
  • Keep aside for 30 minutes.
  • Now chop the dates and heat with butter in a separate pan till dates soft.
  • Make small balls of dough and fill the date filling to it.
  • Make kleicha/Mamoul like shape by hand or using a mould.
  • Bake in oven for 30-35 minutes.
  • Cool on tray and then serve.
  • Note: Spices, salt and baking powder can be added in flour during doughing, also a little quantity can added to date filling
  • Mamoul lover (from Syria and Lebanon) can also add Orange blossom water and semolina
