Karachi Sohan Halwa/Halva

Karachi Sohan Halwa is a crunchy sweetmeat, very tasty and popular.

Ingredients:

  • Samnak (Sprouted/germinated wheat flour)   25 gram
  • Maida   50 gram
  • Sugar 500 gram
  • Ghee (to be added in portions during cooking)  200-300 gram
  • Cardamom green powder 1 pinch
  • Butter flavour (optional) few drops
  • Almond/Pistachio/Walnut   (partially chopped) 50 gram


Procedure:

  • Add Samnak, Maida and 2 tablespoon Ghee in 1-2 cup water and boil for few minutes then add sugar and cook . This is known as pateel.
  • Now cook this pateel on low heat , add remaining ghee in portions during cooking. Vigorous stirring is required  during cooking. When material is thick enough, check for taar (thread) by picking little material up in the air, if it goes up like a thread, stop further cooking. Add Cardamom green powder and flavour and mix well. Then pour in mould (ring or cube or diamond shape).  Place nuts in mould at bottom before pouring the mixture.   If moulds are placed on a chilled surface it will ready in 15 minutes.
  • Mould holding tray can be placed on an ice filled pan.
  • Delicious Karachi Sohan Halwa is ready .

  • How To Prepared Samnak:



  • Samnak is available in wholesale grain market. It can be prepared at home as well. Spread  the wheat grains on a gunny cloth placed in a tray. Moist with water and keep under sun shade, The wheat will start germinating within 1-3 days. Remember to sprinkle water daily for moisture. When all the grains germinated , dry them under sun light and grind. This is Samnak (Germinated or Sprouted wheat).

Tashreeb (an Iraqi Dish)

Tashreeb is a delicious , balanced and nutritious dish of Iraq. I dedicate my this recipe to the Foodista team.

Prepared Ingredients for Tashreeb



Ingredients:

  • Mutton Chops  (3 chops chopped together)   1 kg
  • Arabian bread or pitta bread  (chopped in 4 pieces and crunched with olive oil)  2 nos.
  • Yoghurt (beaten)  1/2 kg
  • Garlic (cloves de-skinned and halved)  1 medium size
  • Fresh Parsley/Coriander leaves 1/2 cup
  • Onion de-skinned and quartered  4 small size
  • Lemon juice  1 table spoon
  • Olive oil  1/2 cup
  • Tomatoes  coarsely chopped 3 nos.
  • Salt to taste
  • Red chilli to taste
  • Cubeb powder  1 teaspoon
  • Black pepper powder  1 teaspoon
  • White pepper powder 1/2 teaspoon
  • Sumak powder   1 teaspoon
  • Pimento powder 1 teaspoon
  • Cloves powder 1/4 teaspoon
  • Cardamom green powder 1/2 teaspoon
  • Cinnamon powder  1/4 teaspoon


Procedure:

  • Thoroughly wash the chops and dry with paper towel.
  • Mix spices together and coat over chops and keep aside for 2 hours to marinate.
  • Now heat oil on medium flame, add yoghurt, garlic, tomatoes, onion and marinated chops.
  • Cook on low flame till chops are well tender.
  • Now add lemon juice, parsley and pitta bread pieces and simmer for 15-20 minutes.
  • Delicious Tashreeb is ready. Serve with Arabian white rice.

Shashlik with Arabian Touch چکن شاشلک

Shashlik with Arabian Touch


Shashlik is a Russian dish but popular all around the globe. I have given  some Arabian spice touch to this dish.

Shashlik before Grilling
Ingredients:
  • Boneless Chicken cubes   1/2 kg
  • Red Onion (Cubes of single layer ) from 1 large onion
  • Tomatoes Cubes (Seed and pulp less)  from 2 large tomatoes
  • Capsicum Cubes (Seed and pulp less) from 2 large capsicum
  • Garlic crushed 1 medium pod
  • Ginger crushed 2 inch long piece
  • Pomegranate juice 4 tablespoon
  • Or if not available use lemon juice
  • Lemon Juice 2 tablespoon
  • Olive Oil as desired for grilling or saute
  • Garnish: Mint leaves and Lemon wedges
  • Salt to taste
  • Chilli to taste
  • Coriander powder 1 teaspoon
  • Cumin seed powder  1 teaspoon
  • Black pepper  1 teaspoon

For Arabian Touch Add;

  • Sumak powder 2 teaspoon
  • Allspice 1 teaspoon
  • White pepper 1/4 teaspoon


Procedure:

  • Coat spices, garlic ginger paste, pomegranate juice (lemon juice) on chicken cubes and keep aside for marination.
  • Now take pre-soaked wooden skewers insert onion cube then chicken cube, then capsicum cube and chicken cube, then tomato cube and chicken cube and onion cube at last.
  • Now take 2 table spoon olive oil in a frying pan add 3-4 wooden skewers with chicken cube and vegetables and saute over low flame till chicken is tender. (It will take 10-15 minutes)  OR grill over charcoal  fire. Brush oil during grilling over charcoal fire.
  • Garnish with mint leaves and lemon wedges
  • Delicious Shashlik is ready Serve with Naan and Mint raiat

Fruit Trifle فروٹ ٹرائفل

Fruit Trifle


Fruit Trifle is a very sweet toothed dessert popular among children and youths.



Ingredients:

  • Milk 1 litre
  • Custard powder  6 tablespoon
  • Sugar to taste
  • Crystal Jelly any flavour   1 packet
  • Short Cake   1
  • Fruits (Grapes, banana, strawberry, mango, pine apple or other available)
  • Thick cream  chilled  1 pack


Procedure:

  • Prepared crystal jelly and set aside .
  • Now Add custard powder and sugar to milk and cook on medium flame till thick.
  • Now in a glass bowl place 1/2 cake at bottom  and pour some crystal jelly over it.
  • Now add a layer of chopped fruits and then a layer of custard and then fruit layer at top custard layer.
  • Decorate top with pine apple, banana, strawberry. Make decoration with thick cream.
  • Delicious Fruit trifle is ready, cool and serve.

Dukka of Madina Munawarah


The Dukka of Madina Munawara is liked by me very much. It goes well with Chat, Dates, fruits and Pita Bread  brushed with olive oil and Dukka sprinkled over it.



Ingredients:

  • Sesame seed roasted then powder  6 tablespoon
  • Sesame seed whole roasted  1 teaspoon
  • Coriander whole roasted then  powder  4 teaspoon
  • Cumin whole roasted  then  powder 4 teaspoon
  • Fennel whole roasted then powder
  • Black pepper powder  1/2 teaspoon
  • Salt 1/2 teaspoon
  • Sumak  3 teaspoon


Procedure:

  • Roast material individually or combine them and  then roast except sesame which is  to be roasted separately.
  • Then mix other material.
  • Enjoy the same taste as you purchased Dukka from Madina Munawara.
  • Assalat o Wa Salmo Aala Rasool Allah

Kafta Salad كافتا سلطة

Kafta Salad


This salad is very eye appealing and mouth watering to be served with Kafta Kabab



Ingredients:
  • Tomatoes chopped 1
  • Spring Onion  chopped 2
  • Green Chillies chopped  1
  • Cucumber medium size chopped 1/2
  • Lemon wedges quartered  6 pieces
  • Olive oil 1 tablespoon
  • Sumuk powder   1/2 teaspoon


Procedure:

  • Mix all ingredient together except sumuk powder in a frying pan and toss over medium flame for 1 minute.
  • Pour into serving bowl and sprinkle sumuk at top.
  • Serve with Kafta Kabab.

Kafta Kabab is very famous Lebanese kabab, also popular in Arbil Iraq , Syria and Turkey.

Ingredients:

  • Minced meat (Lamb/Chicken)     1/2 kg
  • Onion crushed 1/2
  • Fresh Parsley or Coriander  chopped 1/2 cup
  • Egg   beaten  1/2
  • Garlic cloves crushed 2
  • Olive oil  1 tablespoon
  • Salt to taste
  • Paprika to taste
  • Black pepper 1/2 teaspoon
  • Sumak powder 1/2 teaspoon
  • Pimento powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon
  • Coriander powder 1/2 teaspoon


Procedure:
  • Mix together minced meat , egg, onion, parsley, garlic and spices then grind in an electric food processor/chopper.
  • Now made 12-15 Kafta.
  • Insert pre-soaked wooden skewers and keep aside to marinate.
  • Now brush with olive oil and grill over charcoal fire till tender.
  • Delicious Kafta Kabab are ready serve with crunchy pita bread, salad and mint chutney.
