Chinese Chicken Chow Mein چائنیز چکن چاومن

Chinese Chicken Chow Mein is a very tasty noodles dish of Chinese origin. It is popular world wide. I and my family liked it very much.

Chinese Chow Mein
Ingredients for Boiled Noodles:
  • Noodles   250g
  • Water 2-3 litre
  • Salt 1 teaspoon
  • Oil  4  teaspoon

Ingredients For Chicken Stir Fry:

  • Chicken stripped            1/2 kg
  • Oil            1/2 cup
  • Onion chopped in strips            1
  • Ginger garlic paste               1 teaspoon
  • Salt           to taste
  • Black pepper powder              1 teaspoon
  • Chinese Salt           2 teaspoon
  • White pepper powder           1/2 teaspoon
  • Sugar             2 teaspoon
  • Sesame oil, for garnish and flavour          2  teaspoon

  • Spring onion chopped into strips            2 large
  • Capsicum chopped into strips            2 medium
  • Cabbage chopped into strips            1 cup
  • Carrot chopped into strips              1 cup

  • Chicken Stock (Murgh Yakhni)           1 cup
  • Cornflour starch            1 teaspoon
  • Vinegar           1 tablespoon
  • Soya sauce         1 tablespoon

Procedure For Boiled Noodles and Chicken Stock:

  • Take 2 litre water in a pan.
  • Add salt and 2 teaspoon oil, and bring to boil.
  • Add noodles and continue boil for 10-15 minutes.
  • Drain/strain under running tap water using sieve, then place boiled noodles in a pan add 2 teaspoon of oil and mix well. Keep aside.

  • Now heat chicken stock in a pan add cornflour, soya sauce and vinegar.
  • Add little black pepper and salt if not added earlier in chicken stock.

Procedure For Stir Fry Chicken and Vegetables:

  • Saute Onion in oil add ginger garlic paste, chicken and spices.
  • Cook on medium flame till chicken is tender. Add little if necessary.
  • Now add chopped spring onion, carrot, cabbage and capsicum and cook on simmering heat till vegetables are tender.
  • Now add boiled noodles, prepared chicken stock and 2 teaspoon of sesame oil and simmer.
  • Delicious Chinese Chicken Chow Mein is ready.
  • Serve with hot chilli sauce.

Okra Fry With Potatoes (Bhindi Fry with Aaloo) فرائیڈ بھنڈی آلو

Okra Fry with Potatoes is a world renowned side dish used with Dall Chawal and Pickle like a salad.


Ingredients:

  • Okra (lady finger) chopped in small pieces      1/2 kg
  • Potatoes chopped into small cubes          2
  • Salt      to taste
  • Chat Masala (optional) for more taste
  • Oil     for frying.

Procedure:

  • Fry okra in oil till crunch on medium flame. Keep aside.
  • Fry potatoes in the same oil till crunch and tender. Keep aside.
  • Mix fried okra and fried potatoes in bowl, sprinkle salt or chat masala as you wish.
  • Delicious Okra Fry with Potatoes is ready to serve.

Dahi Wali Harri Mirchi دہی والی ھری مرچ

Dahi Wali  Harri Mirchi is a delicious snack used with Dall Chawal in some South Indian community of Karachi. It's preparation takes time but you will get a tasty snack at end.



Ingredients:

  • Harri Mirchi (Green Chillies) washed and wiped      1kg
  • Yoghurt       100gm
  • Cumin powder       2 teaspoon
  • Black pepper powder     1 teaspoon
  • Salt         2 teaspoon
  • Oil       for frying

Procedure:

  • Mix spices to yoghurt and make a paste.
  • Apply this paste to green chillies and keep aside for 24 hours to marinate.
  • After 24 hours stirr/shake with hand and keep aside for another 24 hours to marinate.
  • After 48-72 hours spread these marinated chillies on a board/sheet and dry under sunlight for 2-3 days. The colour will change from green to yellowish.
  • When completely dried store in an airtight jar.
  • When needed fry in oil as many as chillies you required for serving.
  • Serve with Dall Chawal.

Mango Pickle Home Made Style آم کا اچار

Mango Pickle Home Made Style (Ghar Jesa Aam Ka Achar) is a very delicious and tangy pickle loved by all age group. This recipe is for those who can not have time to sun dry chopped mango pieces in sunlight. If you have time and Sunlight at your roof top  or in your courtyard  then apply salt to mango pieces and put the material in sunlight for 2 days. Then put the material in pickle pot (martaban) add uncooked mustard oil and spices. Keep in dark for 2-3 weeks, shake occasionally after 1-2 days with the help of dry wooden spoon. In commercial production brined mango pieces are used and some preservatives and vinegar is added. My this recipe is without vinegar.  If you like vinegar then add 4 table spoon of vinegar.

Ingredients:

  • Raw Mango (Keri) chopped into 1x1 Inch size 1 kg
  • Mustard Oil          1-2 litre
  • Salt          2-3 teaspoon
  • Red Chilli Powder       2-3 teaspoon
  • Haldi Powder        1 teaspoon
  • Mustard Whole        2 teaspoon
  • Fennel whole         2 teaspoon  
  • Fenugreek Seed        2 teaspoon
  • Kalaunji       2 teaspoon
  • Ajwain  1 teaspoon

Procedure;

  • Thoroughly wash and squeeze chopped raw mango pieces.
  • Now heat oil in a pan, add raw mango pieces , and cook on medium flame for five minutes, then ten minutes on simmering heat.
  • Remove from heat and  cool.
  • Add all spices and mix well.
  • Store in a pickle pot (Martban) for 1-2 weeks till flavour is developed and spices are soaked well.
  • Delicious and Tangy Mango Pickle is ready.
  • Serve with Dall, Roti, Sambhar and Rice.

Gawar Phali with Aaloo (Guar Bean with Potato) گوار پھلی اور آلو

Gawar Phali with Potato is a regular vegetarian dish of Pakistan.

 

Ingredients:
  • Gawar phali chopped           1/2 kg
  • Potato chopped                     250 g
  • Tomato chopped                   2
  • Onion chopped                     1
  • Ginger paste                         1 teaspoon
  • Garlic paste                          1 teaspoon
  • Oil                                        1 cup
  • Salt                                       to taste  
  • Red Chilli powder               to taste
  • Haldi                                    1/2 teaspoon
Procedure;
  • Saute onion in oil. Add tomato, ginger garlic paste and spices, and fry for 2-3 minutes.
  • Now add gawar phali and potatoes, fry for 2-3 minutes.
  • Now cook on simmering heat till potato and phali are tender (15-20 minutes).
  • Low water is added in this recipe.
  • At last fry on high flame for 2 minutes.
  • Delicious Gawar Phali with potato is ready.
  • Serve with roti.

Homemade Mayonnaise مایونیز گھر پر تیار

Mayonnaise is a stable emulsion of egg yolk and oil with vinegar or lemon juice. Mayonnaise is originated from Spain. Now it is used world wide in salad dressing. Its recipe is simple and have many variations. In Pakistan Young Food's brand is more popular than imported brand. Because it is cheap as compare with Imported brands. You can prepare mayonnaise in your kitchen within 30 minutes by using my following recipe.



Ingredients:

  • Egg yolks 2
  • Oil  1 cup
  • Mustard powder 1/2 teaspoon
  • Salt  1/4 teaspoon
  • Black pepper 1/2 teaspoon
  • Vinegar  1 teaspoon
Procedure:

  • Add mustard powder, salt, black pepper to the egg yolk taken in a bowl. Mix well.
  • Now start adding oil in small portions to this mixture and beating with an electric beater/mixer. 1/2 to 1 teaspoon of oil to be added initially then increase the quantity. Continue adding oil and blending till all oil is absorbed and a creamy texture of Mayonnaise in obtained.
  • Now Your homemade mayonnaise is ready, use as needed in dressing , in salads.
Variations:
  • Crushed Garlic can be used to have Garlic Mayonnaise
  • Curry powder can be added to have a curry like flavour.

Aaloo Pakora Curry آلو پکوڑے کا سالن

Aaloo Pakora Curry is a very simple vegetarian dish , you can use besan pakora or moong dall pakora for this curry. I am using moong dal pakora for this curry.



Ingredients:
  • Prepared Moong Dal Pakora  15-20 pcs (recipe is given below)
  • Patatoes 3 medium  cut into four pieces
  • Onion chopped 1
  • Tomatoes chopped 2
  • Ginger paste 1 teaspoon
  • Garlic paste 1 teaspoon
  • Oil 1 cup
  • Fresh Coriander leaves for garnish
  •  Salt to taste
  • Red Chillies powder to taste
  • Haldi 1/2 teaspoon
  • Garam Masala 1 teaspoon
Procedure:
  • Saute onion in oil, remove and grind.
  • Now add ginger garlic paste, grinded onion, fry for 2 minute then add tomatoes and spices except garam masala and fry again for 2-5 minutes.
  • Now add potatoes fry for 2 minutes then add water according to your need of gravy.
  • Cook on medium flame till potatoes are tender.
  • Now add prepared pakoras and sprinkle garama masala and fresh coriander leaves.
  • Simmer for 2-3 minutes. Serve with Roti or Rice.

Falsa Sharbat) فالسے کا شربت

Falsa is a very useful fruit in the May-Jun seasons. It is refreshing and cooling.

Falsa Syrup is very easy to prepared and can be used when flasa is not available in market.



Ingredients:
  • Sugar 1 kg
  • Falsa  250 g
  • water  1cup
  • Falsa flavour (optional) few drop
  • Purple  Food Colour (optional)  one little pinch
Procedure:
  • Pick and wash flasa under running water tap.
  • Put in a electric blender with 1 cup water and blend for few minutes.
  • Pass through muslin cloth or metal strainer to get liquid by pressing and squeezing.
  • Now Take  sugar and falsa extract in a pan , cook on medium flame till a clear syrup is obtained.
  • Cool , add colour and flavour if required, Then fill in bottle.
  • Keep refrigerate till required for use.
  • Use 2-3 teaspoon of prepared Falsa Syrup in a chilled water and drink.

Dal Moong Pakora دال مونگ کے پکوڑے

Dal Moong is a rich source of protein. Its Pakora are very crunchy and tasty.



Ingredients for Dal Moong Pakora:

  • Dal Moong  250 g
  • Baking Soda 1/4 teaspoon
  • Salt to taste
  • Red Chilli powder to taste
  • Cumin powder 1 teaspoon
  • Onion  finely chopped 1 medium
  • Green Chillies chopped 2
  • Oil for frying.
Procedure:
  • Soak dal in water for 2 hour, drain then grind.
  • Now add all the spices and make a batter.
  • Heat oil in a Karahi/pan , add small quantity of batter in portion  to the heated oil, fry till golden.
  • Delicious Moong Dal Pakoras are ready. Serve hot with  mint chutney.

Let try my this recipe for yourself and your kids at Home.

I Dedicate My this recipe to Mr. Farroq Abdullah Memon (Late), Director Pakistan Market for Sanfaz Spices and Food ,who provided me the menu booklets of many food chains from Dubai. He left this world on the night of the moon of Eid ul Fitrt 2011. We prayed Salat ul Fajr, then His Nimaz - Janaza then Eid ul Fitr prayers. He was so humble and kind that every person was wants to weep but his peon was weeping like a little children when he was laid to rest. May Allah bless him and keep his soul to peace.

Recipe For Farooj Shewarma:
  • Shewarma breads        4
  • Grilled Chicken breast   2
  • Mayonnaise  as desired
  • Tahini sauce as desired
  • Hummus (optional)
  • Tomato Ketchup as desired
  • French Fries as desired ( from 2 medium potatoes)
  • Olive slices as desired
  • Cucumber slices as desired
  • Onion slices or rings as desired.
  • Lemon wedges for garnish
  • Mint leaves for garnish.
Procedure:
  • Bake thin bread with little olive oil.
  • Make shreds/slices of grilled chicken breasts , place these chicken slices on prepared bread, apply salad.
  • Then apply thini sauce, Mayonnaise and tomato ketchup. Fold like a roll and enjoy.
Procedure for Grilled Chicken Breasts:

Ingredients
  • Chicken breast  cut into coarse pieces  2 breasts
  • Olive oil 1 teaspoon
  • Sumuk powder 1 teaspoon
  • Pimento powder 1teaspoon
  • Cinnamon powder1/4 teaspoon
  • Black pepper powder 1/2 teaspoon
  • cardamom green powder 1/2 teaspoon
  • Salt to taste
  • Red Chilli (optional0 1/4 teaspoon
  • Garlic ginger paste 1 teaspoon
  • Lemon Juice (optional) 1 teaspoon
Procedure:
  • Mix all spices with oil then apply on chicken breasts, keep aside for 1 hour to marinate.
  • Insert the marinated Chicken pieces into skewers and grill over charcoal fire till tender. Brush with oil during grilling.
