Moutabel (Syria/Jordan/Lebanon)
Moutabal is a spicy version of Baba Gonoush, It is popular in Lebanon,Syria and Jordan.
Ingredients:
- Brinjal 3 large size
- Lemon Juice 2-3 tablespoon
- Tahini 3-4 tablespoon
- Olive oil 2 tablespoon
- Garlic crushed 3 cloves
- Salt 1/2 teaspoon
- Black pepper 1/2 teaspoon
- Green Chillies chopped 1-2
- Cumin powder 1/2 teaspoon
- Yoghurt beaten 2-3 tablespoon
- Fresh Mint leaves chopped For garnish
Procedure:
- Pierce Brinjal with the help of fork, Then grill over a flame till tender. Check tenderness by inserting fork in skin. It takes around 20-30 minutes.
- Cut grilled Brinjal in two parts and scoop out flesh/pulp.
- Add Tahini, Lemon juice, Olive oil, Garlic , salt, pepper, yoghurt, and cumin. Then process in an electrical processor.
- Moutabel is ready. Garnish with Olive oil, Mint leaves and green Chillies . and serve with Pita bread/khubz.
