Baba Gonoush (Egyptian Dish)
Baba Gonoush is a very tasty dish of Egypt, popular among Arab around the world. It is made from grilled Brinjal/Aubergine/Eggplant/Baingan.
Ingredients:
- Brinjal 3 large size
- Lemon Juice 2-3 tablespoon
- Tahini 3-4 tablespoon
- Olive oil 2 tablespoon
- Garlic crushed 3 cloves
- Salt 1/2 teaspoon
- Black pepper 1/2 teaspoon
- Fresh Parsley/Coriander leaves chopped for garnish
Procedure:
- Pierce Brinjal with the help of fork, Then grill over a flame till tender. Check tenderness by inserting fork in skin. It takes around 20-30 minutes.
- Cut grilled Brinjal in two parts and scoop out flesh/pulp.
- Add Tahini, Lemon juice, Olive oil, Garlic , salt and pepper and process in an electrical processor.
- Baba Gonoush is ready. Garnish with Olive oil and Fresh Parsley/Coriander leave and serve with Pita bread/khubz.
