Baba Gonoush (Egyptian Dish)

Baba Gonoush is a very tasty dish of Egypt, popular among Arab around the world. It is made from grilled Brinjal/Aubergine/Eggplant/Baingan.


  • Brinjal  3 large size
  • Lemon Juice   2-3 tablespoon
  • Tahini  3-4 tablespoon
  • Olive oil   2 tablespoon
  • Garlic crushed 3 cloves
  • Salt 1/2 teaspoon
  • Black pepper 1/2 teaspoon
  • Fresh Parsley/Coriander leaves chopped  for garnish


  • Pierce Brinjal with the  help of fork, Then grill over a flame till tender. Check tenderness by inserting fork in skin. It takes around 20-30 minutes.
  • Cut grilled Brinjal in two parts and scoop out flesh/pulp.
  • Add Tahini, Lemon juice, Olive oil, Garlic , salt and pepper and process in an electrical processor.
  • Baba Gonoush is ready. Garnish with Olive oil and Fresh Parsley/Coriander leave and serve with Pita bread/khubz.
