Bihari Kabab
Bihari Kabab is one of the most popular Kabab of Bihari Community of Karachi. I dedicate my this recipe to my Bihari Classmates Azhar Inam Malik, Syed Anwar Ahmed, Khurshid Ikram Kakavi, Irshad Javed, Baba Abid.
Ingredients:
- Thin beef slices 2 inch x 4 inch (Parchay or Pasanda meat) 1 kg
- Mustard oil 3 tablespoon
- Raw papaya crushed (Unripe papaya) 2 tablespoon
- Onion crushed 2
- Ginger crushed 2 teaspoon
- Garlic crushed 2 teaspoon
- Yoghurt beaten 1/2 cup
- Salt to taste
- Black salt 1/2 teaspoon
- Chilli powder to taste
- Cumin powder 1 teaspoon
- Coriander powder 1 teaspoon
- Cubeb (Kabab Chini) powder 1 teaspoon
- Mustard powder 2 teaspoon
- Naushader 1 teaspoon
- Black pepper powder 1/2 teaspoon
- Cardamom green powder 1/2 teaspoon
Procedure:
- Fry onion in oil till golden brown. cool and crush.
- Now add crushed onion, ginger, garlic, papaya, oil and spices to the beaten yoghurt and make a paste.
- Coat this paste to meat strips and marinate for 2 hours.
- Insert the marinated meat strips in skewers (seekhs) in sewing manner.
- Apply thread to avoid fell during grilling.
- Now grill over charcoal fire till tender.
- Bihari Kabab is ready.Serve with raita and salad and Roti/Naan.
