Singaporean Rice سنگاپوری رائس

Singapore is a tiny nation between  Malaysia and Indonesia but world famous country for its Singapore airline and Singaporean Rice.  Singaporean Rice is a very tasty dish with  little spices like Chinese dishes.

Ingredients

Boiled Rice 1/2 kg
Noodles 100g (1/2 packet)
Chicken stock 1/2 cup

For Chicken Curry:

  • Chicken boneless strips  1/2 kg
  • Tomato cut into strips 1
  • Onion cut into  strips 1
  • Ginger crushed 1 teaspoon
  • Garlic crushed 1 teaspoon
  • Oil 1/2 cup
  • Sesame oil 1 tablespoon
  • Corn Starch 1 tablespoon
  • Soy Sauce 2 tablespoon
  • Vinegar 1 tablespoon
  • Sugar 1 teaspoon
  • Salt to taste
  • Cutter black pepper 1 teaspoon
  • Chinese Salt 2 teaspoon
  • Red Chilli powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon

Vegetables:

  • Carrot cut into strips  1
  • Capsicum cut into strips 1
  • Spring onion cut into strips 3-4
  • Cabbage cut into strips 2 cups

Scrambled egg:

  • Eggs 2
  • Salt to taste
  • Black pepper 1/2 teaspoon
  • Haldi (optional) 1/4 teaspoon

Procedure:

  • Boil rice in enough water, drain and keep aside.
  • Scramble egg in little oil with salt and pepper , keep aside.
  • Boil noodles in water with little oil, drain and then fry in oil till golden, keep aside.

  • Fry Chicken in oil , add ginger garlic and fry for 2 more minutes.
  • Now add Tomatoes, onion, vinegar, soy sauce, spices, corn starch dissolved in little water, sugar.
  • Fry for 2-3 minutes then cook on simmering heat till chicken is tender.
  • Now add vegetables and 1 tablespoon sesame oil and cook on low heat till vegetables are tender.
  • Now add scrambled egg and  fried noodles.
  • Add rice and chicken stock at last.
  • Sprinkle 3-4 green chillies and 1 teaspoon sesame oil and simmer.
  • Delicious Singaporean Rice dish is ready. 
  • Serve hot.
