Shahi Tukray is a very famous dessert . It is very sweet, nutty and nutritious. Decorated with saffron and gold foil or silver foil. Shahi means King' s in urdu, therefore it is the dish from King's Kitchen of Mughal Emperor, therefore I used Pure Gold Foil in decoration of this dish. Make this dish of the Day of comming Eid ul Fitr and enjoy.

Ingredients:
For Sugar Syrup:
- Sugar 1 up
- Water 1/2 Cup
For Bread Slices Fry:
- Bread slices 8 no.
- Oil for frying
For Evaporated Milk:
- Milk full cream 1 litre
- Sugar 1/2 - 1/3 cup
- Cardamom green seeds 1 pinch
- Pistachio chopped 15-20 no.
- Almonds chopped 15-20 no.
- Saffron few threads
- Rose water 1 table spoon
- Khoya 50 g
- Condensed milk 1/2 - 1 cup
For Garnish:
- Saffron threads few
- Pistachio chopped 5
- Almond chopped 5
- Gold Foil 1-2
- or
- Silver foil 1-2
Procedure:
Take sugar in a pan, add water and cook on medium flame till a thick sugar syrup is obtained. Keep aside.
Now cut bread slices in diagonal to obtain bread triangles. Fry these triangles of bread in oil till golden brown.
After frying dip these fried bread pieces in prepared sugar syrup , one by one for 15 second, remove and keep aside.
Now boil milk with nuts, sugar, cardamom seeds, saffron and rose water till quantity of milk remain 3/4 - 1/2 on low to medium flame. Avoid sticking and burning of milk with pot walls and bottom.
When evaporated milk is prepared, cool it to room temperature, then add condensed milk and mix well. At last add khoya in pieces.
Now arrange fried and sugar syrup dipped bread pieces in a large platter, pour over prepared evaporated milk.
Decorate with garnish and cool in refrigerator before serving.
Delicious Shahi Tukray are ready.
