Singaporean Rice سنگاپوری رائس

Singapore is a tiny nation between  Malaysia and Indonesia but world famous country for its Singapore airline and Singaporean Rice.  Singaporean Rice is a very tasty dish with  little spices like Chinese dishes.

Singaporean Rice

Ingredients

Boiled Rice 1/2 kg
Noodles 100g (1/2 packet)
Chicken stock 1/2 cup

For Chicken Curry:

  • Chicken boneless strips  1/2 kg
  • Tomato cut into strips 1
  • Onion cut into  strips 1
  • Ginger crushed 1 teaspoon
  • Garlic crushed 1 teaspoon
  • Oil 1/2 cup
  • Sesame oil 1 tablespoon
  • Corn Starch 1 tablespoon
  • Soy Sauce 2 tablespoon
  • Vinegar 1 tablespoon
  • Sugar 1 teaspoon
  • Salt to taste
  • Cutter black pepper 1 teaspoon
  • Chinese Salt 2 teaspoon
  • Red Chilli powder 1/2 teaspoon
  • Cumin powder 1/2 teaspoon

Vegetables:

  • Carrot cut into strips  1
  • Capsicum cut into strips 1
  • Spring onion cut into strips 3-4
  • Cabbage cut into strips 2 cups

Scrambled egg:

  • Eggs 2
  • Salt to taste
  • Black pepper 1/2 teaspoon
  • Haldi (optional) 1/4 teaspoon

Procedure:

  • Boil rice in enough water, drain and keep aside.
  • Scramble egg in little oil with salt and pepper , keep aside.
  • Boil noodles in water with little oil, drain and then fry in oil till golden, keep aside.

  • Fry Chicken in oil , add ginger garlic and fry for 2 more minutes.
  • Now add Tomatoes, onion, vinegar, soy sauce, spices, corn starch dissolved in little water, sugar.
  • Fry for 2-3 minutes then cook on simmering heat till chicken is tender.
  • Now add vegetables and 1 tablespoon sesame oil and cook on low heat till vegetables are tender.
  • Now add scrambled egg and  fried noodles.
  • Add rice and chicken stock at last.
  • Sprinkle 3-4 green chillies and 1 teaspoon sesame oil and simmer.
  • Delicious Singaporean Rice dish is ready. 
  • Serve hot.

Jalfrezi چکن جلفریزی

Jalfrezi is one of the most beautiful and eye appealing and yummy dish of Chinese origin. Me and my family like this dish very much. It is  one of the most popular Chinese dish in Pakistan, everybody like to cook it and eat and enjoy.

Ingredients:
  • Chicken cubes  1 kg
  • Tomatoes chopped  3-4 no. medium size
  • Onion peeled and chopped in eight pieces  3-4 nos.  medium size
  • Capsicum (Bell pepper/Pahrri Mirch/Shimla Mirch) chopped  5-6 nos.
  • Oil half cup
  • Yoghurt beaten 1 cup
  • Green Chillies slitted   4-5 no.
  • Chinese salt  1 teaspoon
  • Corn flour 2 teaspoon
  • Grated (cutter) Black pepper   2 teaspoon
  •  Red Chilli powder 1/2 teaspoon
  • Salt to taste
  • Haldi 1/2 teaspoon
  • Dill seed (soya seed)  1/2 teaspoon

Procedure:

  • Cook tomatoes in hot oil till tender and mashed.
  • Now add chicken cubes, spices and 1/2 glass water and cook on medium flame till the chicken is well done and water is dries up.
  • At this stage add yoghurt, onion, capsicum, green chillies. fry for few minutes and simmer for 10-15 minutes.
  • Delicious Jalfrezi is ready.
  • Serve with Chinese Rice/ Boiled Rice/Fried Rice/Garlic rice and salad.

Namak Paray نمک پارے

Namak Paray is a very simple snack to be served with evening tea. Its recipe is simple and easy to prepare.  Today is the evening of  second day of Eid ul Fitr. You have enjoyed many sweet desserts like Sheer Khurma, Firni, Kheer , Lab e Shireen during these two days. Now you can try this simple recipe.  Enjoy  Meethi Saloni Eid holidays.



Ingredients:

  • Maida  1 cup heaped
  • Salt 1/3 teaspoon
  • Cumin seeds 1 teaspoon
  • Ghee Molten 3 tablespoon
  • Water as required

Procedure:

  • Add salt, cumin and ghee to the maida, then add enough water for a slightly hard dough.
  • Make a dough, then roll on rolling board to a thin and smooth chapati shape. 
  • Cut into diamond shapes and fry in hot oil till golden.
  • Delicious Namak Paray are ready.
  • Serve with hot Tea.

Lab-e-Shireen لب شیریں

Lab e Shireen is one of the most popular dessert in modern cooking of Pakistan. It was originated in the past 5-10 years when pasta industries of Pakistan begins to produce flavoured and coloured vermicellis. Lab e Shireen is a very attractive, eye appealing and mouth watering Dessert served in restaurants and weddings.

The last Ashra of Ramadan is started and shopping for Eid is picked momentum, young girls and ladies are buying colourful Bengals , dupatta and eid dresses, My family is publishing this recipes of Lab-e-Shireen  for them, enjoy Eid with your family and request your mothers to purchase ingredients of Lab-e-Shireen to be cooked on Eid Day.

Lab-e-Shireen
Ingredients:
Stage 1 :
  • Coloured Vermicelli  100 g
  • Milk   1/2 litre
  • Sugar 3-4 teaspoon
  • Almonds de-skinned and chopped  10 no.
  • Pistachio chopped 10 no.
  • Raisin    20 no.

Stage 2:
  • Milk  1 litre
  • Custard powder vanilla flavour 5-6 teaspoonful 
  • Sugar  5-6 teaspoon
Other Ingredients:
  • Cream 200 g
  • Rooh Afza Syrup (Red Syrup) 2-3 teaspoon
  • Apple chopped 1
  • Banana  chopped 3
  • Pine apple drained (tinned)  1 cup
  • Grapes 1 cup
  • Banana Crystal Jelly  1 packet
  • Strawberry Crystal Jelly 1 packet 
  • Cheery(Optional) for decoration
  • Sliced almonds 8-10 for decoration
  • Chopped pistachio 8-10 for decoration
  • Raisin 10 for decoration

Procedure:
Stage 1:
  • Add coloured vermicelli , sugar and nuts to the milk, cook on medium heat till tender. Cool and keep aside.
  • Prepare crystal jelly Banana and crystal jelly strawberry separately, cool till set. Keep aside.

Stage 2:
  • Add custard powder and sugar to the milk , dissolve and cook on medium flame till cook and thick. Cool and Keep aside.
  • Now take a  large glass bowl, pour cooked custard to it and add all prepared fruits to it. Then add afza syrup to the cream, mix well and then add to custard bowl. 
  • Cut prepared crystal jelly in cubes, add more than 1/2 to custard mixture ,retain some for decoration.
  • Now spread prepared coloured vermicelli on top layer, decorate with decoration material and crystal jelly cubes.
  • Mouth Watering Lab-e Shireen is ready, Cool and serve.

Home Made Tomato Ketchup ٹماٹو کیچپ گھر پر تیار کریں

Tomato Ketchup is one of the most popular sauce in the world. There are many brands of Tomato Ketchup in Pakistan like Ahmed Tomato Ketchup, National Tomato Ketchup, Knorr Tomato Ketchup, Shangrilla Tomato Ketchup and many more. Most of the commercially produced Tomato Ketchups are made from Tomato Paste, prepared locally or imported from neighbouring countries. These branded tomato ketchup are easy to use but a load of preservatives are added in their products. Some times food colours are also added to maintain colour consistency. I am not asking not to use the commercially prepared Tomato Ketchup, but selected trusted brands. Tomato Ketchup can easily be prepared in your kitchen also. Kindly follow my following recipe.



Ingredients:

  • Tomatoes, red coloured and ripe, chopped   1 Kg
  • Sugar 1 cup
  • Vinegar   1 tablespoon
  • Malmal (Muslin) cloth 1 x 1 foot piece
  • Chilli powder 1 teaspoon
  • Salt 1 teaspoon
  • Garam Masala powder 1/2 teaspoon
  • Mace   1 flower
Procedure:

  • Boil tomatoes in enough water with spices pouched in malmal cloth., strain to remove skin and seeds.
  • Discard  spices remains in malamal cloth.
  • Grind the skin and seed removed tomato material and pass through a malmal cloth for a fine texture.
  • Now Put the material so obtained in a pan , add sugar and vinegar and cook on medium flame till sugar dissolved and required consistency is obtained.
  • Delicious Tomato Ketchup is Ready, cool and serve.

Shahi Tukray شاھی ٹکڑے

Shahi Tukray is a very famous dessert . It is very sweet, nutty and nutritious. Decorated with saffron and gold foil or silver foil. Shahi means King' s  in urdu, therefore it is the dish from King's Kitchen of Mughal Emperor, therefore I  used Pure Gold Foil in decoration of this dish.  Make this dish of the Day of comming Eid ul Fitr  and enjoy.

Fried Bread Triangles


Pure Gold Foil (Talai Warq)

Ingredients:
For Sugar Syrup:

  • Sugar 1 up
  • Water 1/2 Cup


For Bread Slices Fry:

  • Bread slices 8 no.
  • Oil for frying

For Evaporated Milk:

  • Milk full cream 1 litre
  • Sugar 1/2 - 1/3 cup
  • Cardamom green seeds 1 pinch
  • Pistachio   chopped 15-20 no.
  • Almonds   chopped 15-20 no.
  • Saffron few threads
  • Rose water   1 table spoon
  • Khoya  50 g
  • Condensed milk 1/2  -  1 cup

For Garnish:

  • Saffron threads   few
  • Pistachio  chopped  5
  • Almond chopped 5
  • Gold Foil  1-2
  • or
  • Silver foil  1-2
Procedure:

Take sugar in a pan, add water and cook on medium flame till a thick sugar syrup is obtained. Keep aside.

Now cut bread slices in diagonal to obtain bread triangles. Fry these triangles of bread in oil till golden brown.  
After frying dip these fried bread pieces in prepared sugar syrup , one by one for 15 second, remove and keep aside.

Now boil milk with nuts, sugar, cardamom seeds, saffron and rose water till quantity of milk remain 3/4 - 1/2 on low to medium flame. Avoid sticking and burning of milk with pot walls and bottom.

When evaporated milk is prepared, cool it to room temperature, then add condensed milk and mix well. At last add khoya in pieces.    

Now arrange fried and sugar syrup dipped bread pieces in a large platter,  pour over prepared evaporated milk.
Decorate with garnish and cool in refrigerator before serving.

Delicious Shahi Tukray are ready.
