Cholay Chawal is a low cost rice dish. It is cooked on death anniversaries , a day before Muharram and on any week day. Its taste is good and is totally vegetarian.

- Rice 1/2 kg
- Kabuli Channa (Garbanzo Beans/Chickpeas) 2 cup
- Onion chopped 2
- Tomatoes chopped 2
- Ginger paste 1 teaspoon
- Garlic paste 1 teaspoon
- Green chillies whole 3
- Oil 1 cup
- Salt to taste
- Red Chillies powder 1 teaspoon
- Cloves whole 8
- Black pepper whole 20
- Cardamom green 5
- Cardamom brown 2
- Cinnamon stick 2
- Caraway whole 1 teaspoon
- Tez atta 2
Procedure:
- Wash and soak Kabuli channa for 6-8 hours.
- Then boil in 4-6 glass of water on medium heat till tender, drain and keep aside.
- Wash and soak rice for 30 minutes , drain and keep aside.
- Now fry onion in oil till golden brown.
- Add spices and fry for 1 minute, then add ginger, garlic paste and then tomatoes and fry till tomatoes are soft and tender.
- Add boiled Kabuli channa and cook for 5 minutes.
- Now add 2 glass water and cook till 1-2 boils, at this stage add soaked rice and cook till rice are done. Sprinkle green chillies on top and simmer for 5-10 minutes.
- Delicious Punjabi Cholay Chawal are ready.
- Serve with Mint Raita and salad.
