Eid Dessert (Kleicha/ Klaicha) Iraq Origin ( Mamoul in Syria/Lebanon)

These cookies are very delightful and delicious and are baked on Eid days in Iraq.

Ingredients

  • Plain flour   3 cup
  • Sugar          1/2 cup
  • Butter          2-3 tablespoon
  • Water          1/4 cup
  • Green Cardamom powder   1/4 teaspoon
  • Aniseed (Fennel)                   1/8 teaspoon
  • Cinnamon                              1/8 teaspoon
  • Baking powder                        1/4 - 1/2 teaspoon
  • Salt                                           1/8 teaspoon
  • Pimento                                     1/8 teaspoon
  • Rose essence                           a few drops

Ingredients for filling
  • Dates            125 g
  • Butter             2 table spoon

Procedure

  • Pre-heat oven at 170 degree centigrade
  • Sift the sugar and flour in mixing bowl
  • Now add butter to it and mix well to make a smooth mixture
  • Add water to this mixture and knead well
  • Keep aside for 30 minutes.
  • Now chop the dates and heat with butter in a separate pan till dates soft.
  • Make small balls of dough and fill the date filling to it.
  • Make kleicha/Mamoul like shape by hand or using a mould.
  • Bake in oven for 30-35 minutes.
  • Cool on tray and then serve.
  • Note: Spices, salt and baking powder can be added in flour during doughing, also a little quantity can added to date filling
  • Mamoul lover (from Syria and Lebanon) can also add Orange blossom water and semolina
